Here's my Reuben Casserole recipe:
32 oz. sauerkraut, drained
1 lb. corned beef (from deli counter)
8 oz. bottle thousand island dressing
1 lb.swiss cheese
12 slices buttered rye bread cubed
preheat oven 350
spray 9x13 pan with cooking spray
bottom layer sauerkraut, then corned beef, the dressing then swiss cheese. Top with buttered bread cubes
bake 30 minutes
let cook slightly to set then serve

We are ordering pizza and watching Planet 51 tonight.

We're not Irish and don't like corned beef, so we're having basil pesto over pasta tonight. It's green at least. I also have brussel sprouts (kind of like cabbage, right?) and asparagus. I made the rainbow cupcakes from Family Fun magazine for dessert.
