We are having cream of broccoli soup. I was supposed to be on jury duty today, but the trial was cancelled, so I went hope for a couple of hours before I went to work. While I was home I made the soup, did a couple of loads of laundry, watered and pruned my plants and picked up some of the kids' toys. So now I will have a clean house and dinner made when I get home - almost if I had a Mrs. Cleaver at home.

I'm going to take frozen chicken tenderloins (between a 1/2 pound and a pound) and put them in a square glass pan, dump some pineapple chunks on them and pour some sweet honey catalina dressing on top. Then, I'll cover it with tinfoil and bake it at 350 until I can smell it (probably about 30 minutes or so). I'll post after dinner with specifics on times and how it was.
Just making white rice and a pillsbury loaf to go with it (it's hard to find sides for sweet main dishes).

Mix 1/4 cup thawed, frozen orange juice concentrate, 2 tablespoons Dijon mustard, and 2 tablespoons honey until well blended. Brush the glaze over the hens during the last 15 to 20 minutes of roasting.
