I think medium rare is best. If I am not cooking it myself, it may depend on the restaurant. Well, actually, I never get steak at places where I would have to tell the chef how to cook a steak. That is to say, I don't get steak out often at all, but when I do it's a nicer place that knows how to do it.

Medium rare, which I didn't know was possible growing up. My Dad cooked all of our meat to within an inch of burned. Any red at all, he considered it not done. Which is something, because he was a meat cutter and dealt with raw meat all day. It must be the way his mother cooked it when he was growing up.

This is how it was for me growing up too. I always liked well-done because that's all I ever really had. A bloody steak seemed gross to me! Of course, a properly prepared mid-rare steak isn't really "bloody" at all.

A day late, but I will share that my steak MUST be rare and I most definitely will ask to speak to someone if they can't get this right...especially if it's a higher tier steakhouse or I'm paying Disney prices for steak. I can tolerate medium rare if I'm starving. I will still point it out to management and say that I'm too hungry at that point to wait for them to try and get it right. Anything cooked more than medium rare is completely inedible in my eyes. DH and I will both go as far as to point out when we've been served an inferior cut. I can't tell you how many times he's had to send back subpar ribeyes.

medium rare. I've sent a few back that were well past that. If it's too rare for me I'm likely to eat around the edges and take the rest home and make lo mein the next night

I like a steak done medium rare. When dining out it usually comes more like medium-well. I dont return it as any steak is good to me. Plus I am pretty tolerable with most things when dining out. As long as they keep my drink filled.
