Ripe Bananas, any ideas?

Ok I have three ripe bananas and dont want to waste them, any ideas on recipes? Would love to hear some and try them out. Thanks :)
 
when I dont want to use the ripen bananas.......i take them out of the peel and put them in a baggie in the freezer........then when I am in the mood i will make a banana bread.......I love a good banana bread with lots of flavor from the ripen bananas.....
 
I have a great recipe, unfortunately it is at work:upsidedow . But I found a recipe that looks the same. It is chocolate banana muffins. I substitute the chocolate chips with peanutbutter chips. They are delicious!!!!

Ingredients
1 1/2 cups flour
1 cup sugar
1/4 cup baking cocoa
1 tsp baking soda
1/2 tsp salt
1/4 tsp baking powder
1 1/3 cups mashed ripe banana
1/3 cup vegetable oil
1 egg
1 cup semisweet chocolate chips

Directions
In a large bowl, combine the first six ingredients.
In a small bowl, combine bananas, oil and egg.
Stir into dry ingredients just until moistened.
Fold in chocolate chips.
Fill greased or paper lined muffin cups three fourths full.
Bake at 350 deg F for 20-25 minutes or until muffins test done.
 
I just made banana bread yesterday! Here's my easy recipe:

1/4 lb (cube) butter
1-3/4 c. sugar (sometimes I like to use 1 cup white, 3/4 cup brown)
4 eggs
3-5 bananas, mashed
1/4 tsp. salt
1 tsp. baking soda
2 tsp. vanilla
2 c. flour
1 tsp. nutmeg or cinnamon
1/2 c. walnuts, finely chopped (optional)

Directions:
Cream sugar and butter, add eggs one at a time. Add mashed bananas. Stir in the remaining ingredients.

Coat rectangular 13x9 pan (or two bread loaf pans) with butter and sprinkle cinnamon and sugar in pan. Pour batter in pan(s) and sprinkle top with cinnamon and sugar. Bake at 350 for 30-40 minutes.

NOTE: If you use 5 bananas, you should have just enough to make 24 muffins (bake 20-22 minutes). The less bananas used, the more “cake-like” it will be.
 

I also freeze ripe bananas - I leave mine in the peel. They do turn dark brown but are still great. My kids will eat banana bread or banana muffins if I put chocolate chips in them - so use any of the above recipes & add some chocolate chips - they won't even know the healthy bananas are in there! You can also substitute unsweetened applesauce for oil in any recipe, and I do this with the banana bread all the time. It never gets dry, and then it's even more healthy for the kids without them knowing it!
 
Thank you for the suggestions! I am going to finish cleaning my kitchen and then I am going to use one of those recipes. Not sure which one yet. Got to check if I have all the ingredients etc. Also thanks for the great tips on freezing them too! I knew I could count on my DiSers :)
 
I also like to toss ripe bananas frozen or otherwise in the blender with milk and ice cream maybe some ice. Make a great smoothie.:drinking1

Another vote for freezing the bananas or making banana bread. Here's my recipe:

Ingredients:
3 very ripe bananas
3/4 cup sugar
2 eggs
2 cups flour
1 teaspoon salt
1 teaspoon baking soda
1/2 cup chocolate chips

Preheat oven to 350. Mash bananas. Add remaining ingredients. Mix well. Pour into loaf pan and bake for one hour or until toothpick inserted in center comes out clean.

I throw everything in my Mixmaster and hit go. ;)

I had a smoothie for breakfast and have another banana waiting for breakfast tomorrow. My smoothie ingredients are: ripe banana, skim milk, non fat fruit flavored yogurt, ice cream, and some other type of fruit, depends on what is in the house. I love fresh strawberries, tomorrow I will have crushed pineapple.

Exactly what I do. As soon as I get three or four, I make bread.
 
Make a warm banana compote to serve over pancakes by mashing a up a couple of bananas, tossing in a couple of crumbled Thin Mint Girl Scout cookies (or Keebler Grasshopper cookies,) and some raisins. Warn gently on the stove.

This is so yummy. :cool1: You get the bananas, a light, unexpected crunch with chocolate & mint! :thumbsup2
 
I peel them and then pop 'em in the freezer. I use them to make banana malts. :yay:
 
Bananas Foster

1/2 cup brown sugar
1/4 cup unsalted butter
3-4 bananas, peeled and sliced length-wise
1 teaspoon cinnamon
1/3 cup dark rum
2 tablespoons banana liqueur
  1. In small pan, mix rum and banana liqueur and gently warm it. Melt butter and sugar in a medium non-stick frying pan.
  2. Add bananas and saute until tender (DO NOT OVERCOOK) about 2-3 minutes.
  3. Sprinkle with the cinnamon.
  4. Pour the rum/liqueur mixture over the bananas and flame- Serve over vanilla ice cream
You can skip the banana liqueur.
 
I make a banana pudding.

make this in layers:
take a small box of vanilla pudding (mix with fat free milk)
add a few reduced fat vanilla wafer cookies
sliced bananas

This is quick and a great snack!
 
Well the recipe says 4 bananas but I have made it with 3 , this is my fave dessert!! YUM!:goodvibes
Southern Style Banana Split Cake

2 c. graham cracker crumbs
1/4 c. sugar
1 stick butter, melted
2 (8oz.) pkgs. cream cheese
1 1/2 c. confectioners sugar
4 bananas, sliced
1 (15 oz.) can crushed pineapple
1 (16 oz.) container Cool Whip
1 (10 oz.) jar maraschino cherries, drained
optional: chopped peanuts and Hershey's canned chocolate syrup

Combine the graham cracker crumbs, sugar and melted butter. Mix together and press into a 9x13 pan. Refrigerate until chilled. Beat together the cream cheese and confectioners sugar. Spread over graham cracker crust. Layer bananas and pineapple over cream cheese mixture. Cover fruit with Cool Whip. Refrigerate. Before serving, top with cherries, and if desired chopped peanuts and chocolate syrup.

Note: You may substitute lowfat graham crackers, lowfat cream cheese and Lite Cool Whip. If someone in the family doesn't like pineapple, try strawberries.
