I just made a pineapple upside down cake today, and is waiting for it to cool off to try it. I had made this many of times, and it is yummy.
4 eggs
1/2 cup oil
1 cup warm water
1 box vanilla pudding
1 box yellow cake mix
1 can large crushed pineapples
Marashino cherries
1 block butter or margarine
3/4 cup brown sugar
Preheat your oven to 350 degress. In a mixing bowl, add in the eggs, oil, and warm water. Mix. Then add in the vanilla pudding, yellow cake mix, and the juice from the pineapples. Mix well and set aside. In a 9x13" pan, put the melted butter so that the entire pan is covered, sprinkle the brown sugar evenly over the butter, then add sliced marashino cherries flat side down so that the cherries don't move. Add on the pineapple slowly so that the cherries do not shift. Pour the cake mixture into the pan, again so that the cherries do not move. Bake uncovered for 30 minutes, or until a knife is able to come out without any batter. Let the entire cake cool for a couple of hours. Flip onto a big cake pan or cutting board, and slice.
