Does anyone happen to have a recipe for a coconut cake and / or a pinapple upside down cake. I was wanting to make two cakes for my dd birthday and needed to save some money so thought it might be cheaper to make them myself
but I wanted them to be yummy too. Anyone ?
 
For pineapple upside-down cake just put pieces of pineapple in the base of your regular cake tin (well greased!) and top with your usual pound cake misture. Pampered Chef a few years ago had a nice recipe you baked in their bundt pan - it might still be on the website.

I'm not a big user of coconut, but you could try recipezaar, bbcgoodfood or one of the other sites where you put in ingredients.

ETA they'll certainly be nicer than shop cake!
 
I just made a pineapple upside down cake today, and is waiting for it to cool off to try it. I had made this many of times, and it is yummy.

4 eggs
1/2 cup oil
1 cup warm water
1 box vanilla pudding
1 box yellow cake mix
1 can large crushed pineapples
Marashino cherries
1 block butter or margarine
3/4 cup brown sugar

Preheat your oven to 350 degress. In a mixing bowl, add in the eggs, oil, and warm water. Mix. Then add in the vanilla pudding, yellow cake mix, and the juice from the pineapples. Mix well and set aside. In a 9x13" pan, put the melted butter so that the entire pan is covered, sprinkle the brown sugar evenly over the butter, then add sliced marashino cherries flat side down so that the cherries don't move. Add on the pineapple slowly so that the cherries do not shift. Pour the cake mixture into the pan, again so that the cherries do not move. Bake uncovered for 30 minutes, or until a knife is able to come out without any batter. Let the entire cake cool for a couple of hours. Flip onto a big cake pan or cutting board, and slice.
 
How about a Pineapple Dump Cake?

It is so easy. You just put a can of crushed pineapple in the bottom of a 9 x 13 pan. Then you pour a can of cherry pie filling on top of that. Do not mix. Then you sprinkle a box of yellow or white cake mix on top of that. Slice up 3 - 4 Tbsp of butter and dot top of cake mix. Optional: Also top with one cup of crushed pecans.

Put in oven at 350 degrees for approximately 30-45 minutes (until top is nicely browned).

SOOOO delicious. You can serve it with or without whipped cream on top. :cool1:

Good luck. It is an easy and yummy recipe.
Just be sure to have the cake cool down completely before turning it over.
