Recipes for Summer Salads without Mayo

Strawberry Spinach Salad

2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/2 cup olive oil
1/4 cup distilled white vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion
10 ounces fresh spinach - rinsed, dried and torn into bite-size pieces
1 quart strawberries - cleaned, hulled and sliced
1/4 cup almonds, blanched and slivered

In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, Worcestershire sauce and onion. Cover, and chill for one hour.
In a large bowl, combine the spinach, strawberries and almonds. Pour dressing over salad, and toss. Refrigerate 10 to 15 minutes before serving.

This is a favorite at our house, but slighly varied.

My dressing has these ingredients:
1/4-1/2 cup white sugar (depending on your taste)
1/2 cup vegetable or canola oil
1/4 cup distilled red wine vinegar
1/4 teaspoon paprika
2 cloves garlic, minced (I usually use the jar stuff)

And I toss that dressing onto mixed field greens, sliced strawberries, roasted almond slices, shredded monterey jack cheese. No seeds.

I make the dressing at least a day before, I dress the salad right when we're about to eat.
 
5 Cup Fruit Salad is one of my favorites!!
1 cup pineapple (canned chunks)
1 cup oranges (canned mandarin)
1 cup marshmellows
1 cup coconut
1 cup sour cream (sounds weird, but sooooo good!!)
Mix everything together and refridgerate for at least an hour. Wonderful and refreshing!!
 
We eat a lot of tomato/fresh mozzarella/basil here in the summer, either layered, or cut up with some oil and vinegar. My very easy tomato salad is to buy the tub of mozzarella balls at Costco, which are in a seasoned oil, and add to cut up tomatoes. It's really yummy!
 
If there is an egg allergy you will have to be careful with pasta.
 

Not sure if this has been suggested yet, but its a weight watchers trick that I use.

Replace mayo in pasta salad, potato salad, etc. with Greek style yogurt (like Fage).

For potato salad, I use:
potatoes
celery
splash of apple cider vinegar
touch of mustard
greek yogurt
salt and pepper
eggs (obviously leave these out in your case)
