I've seen quite a few threads mentioning quinoa lately so I thought I'd post this recipe for those looking for recipes for it. It came in my inbox today and I thought it sounded good.
Cajun Quinoa
1/2 cup onion, chopped
1 tsp olive oil
6 garlic cloves, minced
1 1/4 cup quinoa, rinsed & drained
1 cup carrots, coarsely shredded
1 tsp cajun seasoning
1 medium zucchini, quartered lengthwise & sliced
1 can golden hominy, rinsed & drained (14 oz)
1 tbsp fresh thyme or oregano, snipped
In a medium saucepan, cook onion in hot oil over medium heat for 3 minutes. Add garlic, cook for 1 minute more. Stir in quinoa, carrots, cajun seasoning and 2 cups water. Bring to boil, reduce heat. Simmer, covered, 10 minutes. Stir in zucchini, hominy and thyme/oregano. Simmer, covered, for 5 minutes more or until quinoa and zucchini are tender and liquid is absorbed. Season to taste with salt.
