Me! I do - I love it and it makes me feel a lot better....THAT BEING SAID I am a learner who needs instruction in person, and I learned in classes, and went with some regularity prior to thing starting to shut down, which gave me the foundation to be able to now use online type instruction. I know there are a lot of beginner type instructionals out there, so perhaps that would help you? I still like in person classes and hope to get back to them sometime soon, but I canceled my gym membership in December when my husband decided we needed one of those to expensive stationary bikes...it has different stretching & yoga instructors along with bike ride stuff, so I thought since we spent to much on the bike I'd cancel the gym and use the bike and it's library of classes. It hasn't been horrible.
My husband also does yoga, and he'd never set foot in a yoga studio or class, he picked up bits & pieces of it watching random instruction classes online and from me showing him a few moves.
LOVE caramelized onions but feel like I can never get them right. How do you do yours?

Well, since you asked!!!! ha ha - first off, I love me some onions. So here is what I do....I take a huge bunch of onions, yellow, white - whatever I picked up. I mean a good 20-30 depending on the size of them. Cut of the ends, peel them and cut in half. Then I slice thin - or as thin as I can get. I have a huge pan, actually two of them, with lids. I put about 2-3 tablespoons of butter and in and toss in as many onnions as the pan will hold with the lid on it - and I usually have two pans going - plus I will add a bit of water, not much. Maybe about a 1/4 of a cup? I don't measure....so my aim here is the sweat or steam the onions. At some point I'll add a bit more butter. I keep them over the lowest heat/simmer on my stove (I use gas stovetop). I like to use wooden spoon/paddles and I give it a stir every once in a while. Slowly it starts to cook down and the will eventually start to brown. I keep scraping the bottom of the pan and eventually end up with a dark brown mass of onions. I don't use sugar or balsamic vinegar. I let it cool and parcel out into those snack size bags, about half full. Lay flat and freeze, then transfer to those bags to a freezer bag and keep in the freezer, taking out small bags to use as needed. All in all it takes me several hours on simmer to cook the onions down - more than 2, less than 4.. Once or twice a year I will carve out a morning or afternoon to do it, usually a day where I can keep the windows open as that smell will sink into stuff! I love the onions, as does one of my sons. One of my very favorite indulgent type meals is carmelized onions, whole roasted garlic cloves and sharp irish cheddar or cream cheese smeared over a bit of sourdough. ToDieFor.
I've tried it in the crockpot, but didn't get the browning I was going for, so had to finish in the pans anyway. I don't mind doing them, for some reason the long drawn out process, the watching and stirring and the needing a whole afternoon to do it reminds me of cooking with my grandmother. The old broad could cook up a storm and we'd sit for hours in her kitchen, and she could drink a navy battalion under the table - I know because I watched her do it one evening in Bermuda. Dang we had some adventures.... I want to be her when I grow up.
Speaking of growing up, I (and my husband) are now the proud owners of two slightly sore arms and our first vaccine shot! We ended up with Pfizer, even though we were initially told Moderna. No matter to us, we were happy to have the chance to get it. We have our appointments for our second shots in three weeks as well. Although we are in our late 40's, we qualified as we are essential employees, I'm lighting the fire under my parents in FL to get themselves an appt. and have started haunting sites from MD to get them one....they signed up with the FL vaccine website to get a call, but I told them they need to be more proactive, to be on the lookout and not wait to be called. So now I've got them stalking the Publix/CVS & walgreen sites among others. My FIL has had his vaccine as he is a volunteer EMT w/ a fire dept. in WV, although my MIL does not. She too has signed up "on a list" and thinks someone will just magically call her to get it...they may, but not for a while, so we are trying to light a fire under her to hunt down a appointment at other places but she is not terribly motivated or interested. We don't have a close relationship w/ them so we have to tread w/ care there. Anyway, grateful and happy to have the opportunity to get the vaccine.
Dinner this evening is on it's way, husband ordered a stromboli. I have a roaster thawing for Sunday supper. Tomorrow I need to make a quick trip up to a the local grocery for a few items, Sunday afternoon we have a meeting regarding the grant proposal we have been working on for habitat planting. Next week looking rather busy between various appointments and meetings I have. Might meet the youngest and his new lady friend (of which I know nothing about, despite my attempts to get info out of his brother ha ha) for dinner half way between here and there, we will see - still in negotiations over that!
