Possibly one extra in party

Tonight / tomorrow morning is my 60 day mark for ADRs. I just found out we might have one more in my party. Should I go ahead and make all of my reservations for the higher number 7 as opposed to 6? I think that’s the right thing to do since nothing is prepaid, but just wanted to check. We’re looking at:
Topolinos
Fantasmic package sci fi
Sanaa
Akershus
Maybe via napolli
Hoop de Doo
Space 220 lounge
Ogas

Try to book for 7 whenever you can just in case. There is no penalty for most if only 6 show up. Note that you can only book a party of 4 for Space 220 lounge. We had a party of 5 and needed 2 ADRs that I booked under 2 separate MDE accounts within 5 minutes of each other. We were seated in adjacent tables but that isn't guaranteed.

That’s what I was thinking as well! Always easier to subtract than add. Thanks for the note about the lounge, wasn’t aware of that!

make for 7 or 8 as sometimes 8 is easier than 7. ps Hoop Dee Doo is a prepaid

Yes, HDD is one I wouldn’t book extra for, although they will refund if you show up with fewer than booked.
 
Book Hoop Dee Do or any other pre paid with an infant (no prepay charge) so you will have the space if needed and you can pay when you find out when your extra is actually going. HDD is a family style meal so the will bring more food as needed for you.
 
Make them at 7 for now. If only 6 show up at the restaurant, nobody will care.

If nothing is available for 7 but you can get a reservation for 6, then you can get that. Restaurants usually allow you to check in with one more than the reservation, although it might mean a more cramped table or longer wait.

Going from 6 to 7, thinking you’re going to add someone day of, would be a risky move. There are several restaurants that won’t have the ability to change the table from a 6-person to an 8-person on the fly. WDW restaurants will not simply pull up a chair to a 6-person table - they won’t even add a high chair, so a cramped table will not be an option. If OP was going to try to just add one to a 3-person or 5-person table when checking in, results would probably be more favorable since that extra seat is already built in to the table.
 
Thank you all for your insight, I was able to get almost all reservations with the larger party, just one or two I had to go to the smaller party size. I’ll keep refreshing and looking at modifying to see if I can get them fixed before our trip, but I got our three top restaurants with the full party size, so whew!

In the past, when you checked in on the app, you were able to add an additional person amd Disney would accommodate. I realize that it's a pain for the restaurant, since most tables sit even numbers, but it was a seemingly unofficial Disney policy to let you add one more in case plans changed. It's been a while since I've needed to do this, so I don't know if that's still possible.

That option is no longer available checking in online. Now the check in message says “your reservation is for XX amount of people.” Even before the change, it very much depended on the restaurant’s capacity at the time of your ADR. Popular restaurants at peak dining times often did not allow you to add anyone. I got a “you may add 0 guests” message at least once a trip, for places like Sci Fi, Le Cellier or CRT.
