When visiting a port do we bring our passports? Trying to minimize lugging around a bunch of stuff and be organized. Curious of what we must have with us. Also do we need towels when at castaway bay and at the atlantis water park? Thanks

Most ports on cruises do not require you to carry you passport when off the ship. Some do, and the cruise line will inform you as to when you are going to one of those. Usually via announcements in the daily Navigator, and the Cruise Director will mention it during the pre-show talk.

To debark the ship you all need your KTTW cards. To get back on the ship, you'll need (in most cases) your KTTW card and (for those 18 and over) a photo ID. That can be a driver's license, or passport, if you have no other photo ID. The photo ID is primarily for gaining entrance to the port area.

Towels are proved at Castaway Cay - there is a CM handing them out after leaving the ship:

Can't speak to whether Atlantis has their own towels for you to use.

We take passports (and keycard) off anywhere except for Castaway (and Coco when on Royal) Cay. Many do not take their passports. But we do.
 

We used to take our passports off the ship - but with several little ones and simple short shore excursions (closest beach etc) we didn't on the last trip. Only photo ID (driver's license) for adults and KTTWC for everyone is what we did. In each port, adults needed photo ID, including Castaway Cay. Worked great for us.

I was wondering, if I leave our passports onboard and (God forbid) we miss the ship, do they leave our passports at the port for us? Or are we then left without our most important IDs?

If it appears you are going to miss the ship, and your passports are in the safe in your room, it's common practice for the ship's security to enter your room, open the safe, and remove any necessary documents you may need. They are left with the port agent for you to get. They will not search your room for them, however, only the safe.

We always take our passports - it's a "just-in-case" for missing the ship, having a legal encounter (not that I would expect that, but one never knows), or a medical emergency. I figure it beats the alternative of additional hassle or stress in those situations. That said, we don't take them to Castaway Cay because we view there as more of an extension to the ship in practical terms rather than a foreign country.

With regard to Eastern itineraries, I would take it with me in Tortola but not St. Thomas since the USVI are just that - US soil.

I will probably do a combination as well. It looks like we are mainly shopping in Cozumel, so I will take my passport with me. I was more worried about theft in Jamaica and Grand Cayman since I'm going on the horseback riding excursion (the horses go in the ocean) on one and going to the beach at the other. There are lockers for the excursion, but I didn't know that I wanted to trust having my passport in there.
 
As for the towels, Disney had that same big bin of towels at ALL of the ports we stopped at, so we never needed our own towels anywhere. Left them at home.
