Please share your EASY & Delicious crockpot recipe

How many of you (besides me) bring their crock pot on vacation so their dinner is done after playing all day? I always stay in a condo that has a full kitchen. It saves me a ton of time at the end of a busy day. They even make crock pot liners that I use only when on vacation to make clean up a snap!

I did this year at the beach. Oh, which reminds me, an easy hot dog crock recipe....

Pack (or 2, or 3 or 4) of hot dogs
1 can hot dog chili
1 can cheddar cheese soup

Mix the chili & soup and pour over the hot dogs and cook on low for 4 - 5 hours. Use more chili & cheese if you are doing lots of dogs :)
 
Apricot Glazed Chicken
1/2 cup apricot preserves
1/3 cup bottled Russian dressing
1/2 envelope onion soup mix
6 frozen chicken breasts (not thawed)

Mix the first 3 ingredients together. Place chicken in Crock Pot and cover with apricot mixture. Cook on low 5 to 6 hours.
Serves 6.

BBQ Chicken
4-6 boneless skinless chicken breasts
1 large bottle of your favorite BBQ sauce
3 Tablespoons of water
Put water & thawed breasts in crock-pot and cover them with BBQ sauce. Cook on low for 5-6 hours. Serve with mashed potatoes and your favorite veggie.

Beef Stew:
2 pounds cut-up beef stew meat
cut up carrots & potatoes (enough to feed your family and have a good ratio of meat to veggies)
3 packets of brown gravy mix
4-5 tablespoons of corn starch
water, salt & pepper

Put meat & cut up veggies in the crockpot. Fill with water until your crock is a bit more than 3/4 full. Add salt & pepper to taste. Cook on low for 6 hours or until the carrots are tender. Get a large container with a lid (or large jar) and put the powdered gravy mix on the bottom. Remove some of the hot water from the crockpot and fill the jar/container with the water. Stir it up as you go. Add the cornstarch, put the lid on and shake hard until you don't see any more powder. Add the gravy mix back into the crockpot and let it cook another 10 minutes before serving.

Texas Chili
1 pound ground beef
2 cans of pinto beans
1 can of red kidney beans
4 cans of Mexican style stewed tomatoes
1 package/envelope of dry Chili mix seasoning

Brown the ground beef. Put the beef, beans, tomatoes, water, and chili mix in a crock pot. Let cook 2 to 3 hours and then serve with saltine crackers. I like to add corn or potatoes to my crockpot, too. If you add cut-up potatoes, increase your cooking time so that the potatoes are not hard.
 
I forgot this onr. My kids love it. Japanese Pepper Steak

1 lb of steak cut up to bite size pieces(I use London Broil)

1 red bell pepper sliced

1 green bell pepper sliced

1 medium onion sliced

1 cup fresh sliced mushrooms


2 garlic cloves crushed

3 tbs of soy sauce

1 tbs ground ginger

1/2 tsp of crushed red pepper flakes

Put meat in crock with everything but peppers and mushrooms. Cook 4 hours and then add peppers and mushrooms. Cook another 2 hours. Serve with rice.
 

Pulled pork with root beer sauce.

I KNOW that sounds weird, but trust me, it's AMAZING. (My kids even eat them, we tell them they are crabby patties.:lmao:)

* 1 2-1/2- to 3-pound pork sirloin roast
* 1/2 teaspoon salt
* 1/2 teaspoon pepper
* 1 tablespoon cooking oil
* 2 medium onions, cut into thin wedges
* 1 cup root beer*
* 6 cloves garlic, minced
* 3 cups root beer (two 12-ounce cans or bottles)*
* 1 cup bottled chili sauce
* 1/4 teaspoon root beer concentrate (optional)
* Several dashes bottled hot pepper sauce (optional)
* 8 to 10 hamburger buns, split (and toasted, if desired)
* Lettuce leaves (optional)
* Tomato slices (optional)

Directions

1. Trim fat from meat. If necessary, cut roast to fit into a 3-1/2- to 5-quart crockery cooker. Sprinkle meat with the salt and pepper. In a large skillet brown meat on all sides in hot oil. Drain off fat. Transfer meat to cooker. Add onions, the 1 cup root beer, and garlic.

2. Cover and cook on low-heat setting for 8 to 10 hours or on high-heat setting for 4 to 5 hours.

3. Meanwhile, for sauce, in a medium saucepan combine the 3 cups of root beer and the chili sauce. Bring to boiling; reduce heat. Boil gently, uncovered, stirring occasionally, about 30 minutes or until mixture is reduced to 2 cups. Add root beer concentrate and bottled hot pepper sauce, if desired.

4. Transfer roast to a cutting board or serving platter. Using a slotted spoon, remove onions from cooking juices and place on serving platter. Discard juices. Using 2 forks, pull meat apart into shreds. To serve, line buns with lettuce leaves and tomato slices, if desired. Add meat and onions; spoon on sauce. Makes 8 to 10 servings.

*Note: Do not substitute with diet root beer.


I never even bother browning the meat. I forgot to the second time I made it and honestly couldn't tell the difference, so I just skip that step.

Sounds fun! What cut have you used? Do you add the rootbeer concentrate and pepper sauce at that 30 minute mark (after finishing the rootbeer sauce)?
 
Beef Stroganoff

3 lbs. Stew Beef
1 can Golden Mushroom Soup
1 Can French Onion Soup
1 pkg sliced button mushrroms
1 pkg sliced portobello mushrooms (optional)

Cook on Low in crock 6-8 hours

Make a package of egg noodles

Stir in a block of cream cheese (cubed) & 1/2 container of Sour Cream

Delish!
 
Sounds fun! What cut have you used? Do you add the rootbeer concentrate and pepper sauce at that 30 minute mark (after finishing the rootbeer sauce)?



I use whatever that GIANT piece of pork loin at costco is. I cut it in half or in thirds depending on how many people I'm feeding.

I put the rootbeer extract in the sauce when I start cooking it but I leave the hot sauce out because I'm the only one in the house who likes spicy food, so I just put a few dashes on my sandwich if I feel like it.

I recommend getting heavier BBQ buns or rolls because the sauce is pretty thin and regular burger buns don't stand up to it and just get soggy.
 
R the beans in the crock? Do you use fresh, frozen, can? Do they cook all day and not get too mushy?

I use any of the above. I had canned green beans on hand today. I've used canned green beans while cooking a roast in the crockpot too. They are soft after being on low all day, still retain their shape well :upsidedow, not mushy.

It was good a good meal. :)
 
I'll post recipes later but I'm getting ready to enjoy beef stew from the crockpot. When we're done with dinner I'll dig the recipes out.
 
We always do a ham in the crock pot...

1 already cooked small ham, no bone does better (I use a Kentucky Legend ham)

Fill crock pot 2/3 the way with soft drink of your choice (I use ginger ale, but my mom and sis swear by Mtn Dew)

Cook on low for 4-5 hrs, then high for 1-2 hrs. If pressed for time, cook on high for 3-4 hrs.

Ham is very tender and falls apart when you eat. Delicious!
 
Crockpot beef stew
Put beef stew meat (or a london broil, trimmed and cut up into chunks) into the crockpot.
Add peeled chunked-up potatoes, and a bag of baby carrots. Can also add a bag of frozen peas, baby pearl onions, and/or a can of diced tomatoes.
Mix up a couple of packets of Au Jus mix and add to the crockpot so that your other ingredients are completely submerged. Can also use a couple of cans of beef broth (low sodium if you prefer).
Cook all day on low. About a half an hour before serving, make a corn starch slurry, and add that to the pot, stirring well while adding. Cook until thickened.
Serve with hot crusty bread or rolls.
 
I brown pork chops in a frying pan-don't cook them through, just sear. Put into bottom of crockpot, deglaze pan with about 1/4 cup white wine. Stir in a can of cream of mushroom soup and wisk in with the wine/drippings. Add an extra can of mushrooms if desired. Pour over pork chops and cover. Cook 4-5 hours. Serve over rice.

I think I'm going to make Sorsha's beef stew on Monday! Thanks for the recipe.

The crock makes the best Ham and Beans. I make them every year for New Years using the ham bone from our Christmas Honey Baked ham. DH says it starts the New Years off with a BANG:rotfl:

I do a similar technique making hot wings. Put some hot sauce on the bottom, add wings, then lots of hot sauce (Louisiana's Finest -- something like that) on top. Cook on low most of the day. Sometimes, when they are done I'll put them in the oven for a few min. to get them crispy. But they don't need it. They are soooo goood. Blue cheese dressing & hot wings. Just thinking about them, makes me want some!
 
White Chicken Chili

3-4 uncooked chicken breasts
2 small cans green chilis
2 cans white beans, drained
2 large cans chicken broth
1 tsp cumin
Salt and pepper to taste

Cook on high for 4 hours or low for 8 hours. The chicken shreds with a fork and then you have this great white chili! We top it with crushed tortilla chips, cheese, olives, etc. YUM!
 
One of our local radio shows has her Mom come in on Mondays and gives great recipes. Here are two of hers:

TANGY SLOW COOKER PORK ROAST
Ingredients:
1 large onion, sliced
2 1/2 pounds boneless pork loin roast
1 cup hot water
1/4 cup white sugar
3 tablespoons red wine vinegar
2 tablespoons soy sauce
1 tablespoon ketchup
1/2 teaspoon black pepper
1/2 teaspoon salt
1/4 teaspoon garlic powder
1 dash hot pepper sauce, or to taste
Preparation:
Arrange onion slices evenly over the bottom of the slow cooker, and then place the roast on top of the onions. In a bowl, mix together remaining nine ingredients and pour over the roast. Cover and cook on Low for 6 to 8 hours or on High for 3 to 4 hours.

TANGY RUMP ROAST
Ingredients:
5 lb. Rump Roast
1 Large Jar Pepperoncinis
1 Package Au Jus Mix (dry)
1 Cup Water
Preparation:
Place the rump roast, pepperoncinis with juice (stems removed), au jus mix, and water in a slow cooker and cook for eight hours or until meat is very tender and pulls apart. Serve on hot Kaiser rolls with horseradish (optional) on the side. Delicious tangy beef sandwiches.

Be careful with that last one, I tried it, and while the flavor was good, It was so hot that none of us except my hubby could eat it. I don't know if cooking those peppers that long makes them hotter or I just got a jar of abnormally hot ones. but it was a kicker.
 
4 Turkey thighs lightly sprinkled with salt, pepper and poultry seasoning
4-6 large red potatos

place the thighs skin side up in the bottom
put the potatoes on top
No additional liquid is needed

Crock on low for 8 hrs or on high for 5

For ease of cleanup I use the crock pot liner bags
 
Chicken and Broccoli

4-6 frozen chix breasts, place in crock pot.
Add 16 oz sour cream and 2 cans broccoli cheese soup
Cook all day on low.

Before serving, cook 1 bag rottini and 1 bag frozen broc.

Shred chicken in the sauce, Serve over rottini and broccoli.
