Headed in October for first visit and 3 out of the 5 days we're there, MNSSHP is scheduled. The other 2 days are emh days. Was planning on scheduling early breakfast at crystal palace. so would it be okay to do MK on evening emh day? we're not getting hoppers. Also, seeing as how it is F & W in Epcot, should we visit during a weekday rather than Sunday? someone once advised me to save MK and maybe do HS and/or Epcot early in the week. planning on early breakfast at tusker house in AK, too. we arrive on sat the 24th; so i'm leaning towards sunday: AK, monday: epcot, tues: HS, wed: MK (evening emh), thurs: DTD/MNSSHP
 
The October park hours aren't out yet, but once they are, have a look at easywdw.com and their crowd levels and park recommendations in case you want to tweak your schedule.

MK planning can be a headache when there are so many party nights. It means that the park will be quite crowded on the nonparty days when everyone wants to see the night time parade and Wishes. If you can, try to hit MK on a party day, right at RD on a non EMH morning. If you want a preopening breakfast, that would be the day for it. The park will likely have its lowest crowd levels of the week because of the short hours. Because if this you can see an amazing number of attractions without standing in long queues.

Without seeing the crowd calendars, I think your current plan is fine. But if this is your first visit, you need to know that you probably won't have time to see everything at Epcot, and DEFINITELY won't see everything at MK. I would recommend adding an extra day to your ticket to use the morning of the party. Hit MK at RD until around lunch time and then head back to your resort for a rest before going to the party.
 
I agree with PP about adding park days. Depending on what time you are getting in on Sat and how you are traveling you could even consider adding a park day then. We love to do a couple hours at Epcot along with a dinner on our arrive day(plus that helps with the fact that you can only FP Test track or Soaring, not both). Also agree about doing a couple hours in the park on your MNNSHP day instead of DTD. If you are set on getting in some DTD time, it would also be a good option for your arrival day(again depending on when you are getting in). I would definitely say leave your Epcot day for during the week based on what I have read about F&W. Both our trips have been during MVMCP times and we found that party days were actually pretty good days to visit MK as they didn't seem as busy. If you are there at rope drop and stay all the way through till 7 you can get a lot accomplished.
