Park Hopper Ticket Question

We were able to secure a Free Dining package for our upcoming September trip. We are planning on staying 4 nights and are planning on doing two park days, so we had to purchase a two day park hopper for everyone in our party. I am considering adding a day to just one of the park hoppers because one of us is more a doer and the other two want a day off. Will we be able to add one day to just one or do we have to add a day to everyone in the party? Any help would be appreciated.

Is it possible to get 3 day tickets each and then change 'down' the ticket for the two that only want two days? Or will they not refund the unused ticket?
