For Epcot, I would plan on using a FP for Soarin' and Test Track. These two attractions at Epcot are the busiest. When I went in the spring, the lines for these two lines were about two hours long at some points. Not saying that it will be like that now, but as soon as you get inside of the gates of Epcot, I'd go to Soarin', then Test Track.

In EPCOT, you really don't want to keep running back and forth from Future world to World Showcase.

You'll go crazy trying to do that.
My suggestion for an awesome day at EPCOT:

-Eat a good breakfast at your hotel
-Get FP for Soarin
-Living with the Land (FP)
-Skip the Circle of Life
-See Seas w/Nemo & Friends&Turtle Talk with Crush
-Get FP for Test Track
-Ride Journey into Imagination
-See Honey I Shrunk the Aud
-Lunch (if you get quick service, I recommend the sunshine seasons--it is where The Land is)
-Go and use those fast passes!
-Skip Universe of Energy if you are crunched for time. It is really long and boring. Take a nap instead before you tackle World Showcase. (then again..I once took a nap ON Universe of Energy. Slept through the entire thing. no lie.) Universe of Energy is mostly a story/movie to follow. In my opinion, a 3 year old might not be that into it.

-Spaceship earth on way back from nap.
-If you need a snack, stop by the fountain view cafe. They have lots of yummies!
-Ride Malestrom. Get a FP if needed.
-Ride El Rio Del Tempero
-Skip O Canada Film, head for the world showcase shops instead.
-See American Adventure only if you have time.
-Have dinner.
-Go shopping in world showcase some more. Relax and take a nice stroll. Watch performances at the pavilions.
-Go back to Soarin if your FP isn't good until really late.
-9pm See Illuminations

Always remember to be flexible! Sometimes you are victim to your FP times. Have fun!
