O'hana noodles recipe

I forgot to ask on Thursday night when we had dinner there and AllEars doesn't have it posted--anyone know what the recipe is for the noodles at O'hana???
 
I don't have the recipe, but you must have liked them. I heard that they took away the potatos and replaced it with the noodles. I'd be interested in seeing this info too.

Stir-Fried Noodles
'Ohana, Polynesian Resort, WDW
Yield: 4 servings

1 tablespoon canola oil
1 teaspoon each, puréed: garlic and ginger
1/4 cup each, julienned: red pepper and pineapple
2 cups cooked udon noodles
Salt and pepper to taste
1 teaspoon chopped roasted peanuts

Peanut sauce
2 cloves garlic, peeled
2-inch piece ginger, peeled
1/2 cup peanut butter
1/4 cup each: soy sauce, sugar and water
1/8 cup diced Spanish onion
1 tablespoon chopped peanuts

1. For sauce, put ingredients in pan. Bring to boil, stirring. Turn heat to simmer, stirring occasionally. Simmer 10 minutes. Remove from heat, pour in blender. Pulse until smooth.

2. For noodles, heat canola oil in wok. Add garlic, ginger, red pepper and pineapple. Stir-fry until red peppers are tender but still firm. Season with salt and pepper. Add noodles. Stir-fry until noodles are heated. Add 1/2 cup peanut sauce to glaze ingredients. Garnish with nuts.
 
Thank you for that recipe, although there did not seem to be a peanuty type sauce on these noodles. They reminded me more of chinese lo mein noodles. Do you think this could be a different noodle recipe--did O'hana previously have a different noodle dish in a peanut sauce before they went to those potatoes and now to noodles?
 

Ugh, I hope there's no peanuts in them. That just sounds gross to me.

There were no chopped peanuts on our noodles. If there was peanut butter in the sauce, I really couldn't taste it, it was just a nicely flavored noodle dish and it wasn't like the noodles were dripping with a thick sauce of any kind. There was a peanut dipping sauce for the meats, and the sauce on the noodles did not taste as peanutty as that. I just googled the recipe online and found the same information that Hootch provided above. Typically when I've had a peanut sauce on something it has been thicker and these noodles were not greasy or "coated" in a sauce persay. They were very much like lo mein noodles you would get if you ordered chicken or shrimp lo mein (but without the chicken or shrimp). They had a few pieces of chive on them, more as decoration than flavoring. There might have been a few pieces of white onion in there as well. I really liked them a lot, which is why I'm trying to find the recipe. I did have a margarita with dinner which may have affected my palate with regard to peanut flavor sensitivity :)
