DCL Lava Cake:

4 Squares baker chocolate
1 stick butter

Melt the two together in the micorwave...

Then add 1 cup confectionary sugar
2 eggs
2 egg yolks
6 Tablespoons of Flour.

Whisk together briskly.

Pour into individual baking dishes that are greased.

Bake at 425 for 8 minutes. You want just the top to be cooked. THe inside will still be runny and gooey but that is the "Lava." Then go around the edges of the dish and take the cake out into a bowl or eat it in the dish you cooked it in and top with whipped cream or vanilla ice cream. On the cruise they put raspberries and confc. sugar on the top....

looks easy enough..maybe I'll try it out this weekend !!!!!!
 
Now that our mouths are watering for DCL dessert, I am going to get ready for bed. Steve should be home soon, and since Connor was up at 5 and I heard him moving around the house at 520, it's been another long day. As a side, can you believe my little man was up at 5, got dressed, took out the dogs, fed them breakfast, made his own breakfast and was ready to walk out the door 30 mins before we had to leave? He saved me probably 30 mins of doing stuff this morning by doing all that, but since I heard him up, I didn't sleep either.

Okay, you made something different! This is what I thought you made....

Palo Chocolate Souffle
3 tablespoons butter, plus more for greasing the souffle cups
6 tablespoons sugar, plus more for dusting the souffle cups
1 cup milk
3 tablespoons all-purpose flour
3 tablespoons Dutch-processed cocoa
2 ounces (2/3 cup) semisweet or bittersweet chocolate, melted
4 eggs, separated

-Preheat over to 350. Set a full kettle of water on to boil.
-Butter six 4-ounce souffle cups and coat with sugar, set aside.
-Bring milk to boil in small saucepan. Meanwhile, melt butter in medium saucepan over medium heat. Add the flour and cocoa to the butter and beat with whisk until it has a smooth, paste-like consistency. Reduce heat and cook for 1 minute.
-Slowly add hot milk, whisking until smooth, then blend in melted chocolate. Let cool for 5 minutes, then stir in egg yolks.
-Beat egg whites in separate bowl until frothy. Slowly add sugar, 1 tablespoon at a time until glossy peaks form. Stir a heaping spoonful of egg whites into the chocolate, then fold in the remaining whites just until combined.
-Pour the batter into prepared souffle cups. Place cups in large baking dish and add enough boiling water to reach halfway up the sides of the souffle cups.
-Bake for 20 minutes. Serve immediately with warm Vanilla Sauce.

Vanilla Sauce
-Bring 1 1/4 cups heavy cream and 1/4 vanilla bean (split lengthwise) to low boil in saucepan over medium heat.
-Combine 3 tablespoons sugar and 2 small egg yolks.
-Add 2 spoonfulls of boiling cream to egg mixture and stir well, then pour back into the remaining cream and continue to cook over low heat, stirring constantly for 3 to 4 minutes.

Makes 6 servings.


I was thinking, IceCream?? Where's the vanilla sauce?

I hear ya, I haven't been on my treadmill or done pilates for days, I just need to get motivated again, today was a bad eating day, smarties and chips yikes, oh well I'll get back on track tomorrow.

Its pouring rain out, tomorrow its suppose to be 8 degrees, all that snow and rain and mild = a slushy mess
