For the benefit of others here what I just found out ...
I called the hotel number and got the operator ... I then asked to speak to the front desk. At first they weren't going to put me through but I told them I just had a question and that I needed to speak with someone directly at the hotel.
I was put through to the front desk ... the person answering the phone identified themself as working at the front desk. I then explained that I have a reservation in October and was being told by central reservations that WL no longer has bunk beds in their standard rooms. She told me that was absolutely not correct and that there are a limited number of rooms with bunks that are available on a request basis. She then asked me for the names of the people that I spoke to in central reservations ... which I provided her with. She appologized profusely for the confusion and indicated that she would have management look into it.
So while there is still no guarantee ... it is still an available option for which I can call 5 days before I arrive and plea our case.
Hope this helps to clear the confusion.

Oops, you're right. With the kids ages, 2 cabins would probably not be an option either. I just think based on the response of the resort CM of "limited" standard bunk bed rooms and the additional requirement of needing them connecting is going to be a difficult request to fill. To the OP, have you checked the DVC threads to see about buying points for a 2 bedroom Wilderness Lodge villa? Sounds like the bedding available there would be a much better fit. I just don't know how the numbers work with your budget.
