Anyone have a easy chicken dish that goes well with pasta in garlic sauce. That can be kept warm in a sterno tray. My job is to bring the chicken.

Take chicken (bonless or onthe bone), place in pyrex dish.

Sprinkle chicken with:

Salt
Pepper
Italian seasoned breadcrumbs

Add:

Butter
White wine
1 -2 Clove of crushed garlic
Jar of Marinated Artichokes

Cover with foil and bake until cooked thorughout

How easy this is depends on how much you have to make, but this is something we have regularly with garlicky pasta. We usually keep all these ingredients on hand, so it's very easy for me. And if you have a big, deep, heavy-weight saute pan or skillet it should be a snap!

I like to saute small nuggets of fresh chicken breast in olive oil, sprinkled with oregano, toss in some red onion, then a splash of balsamic vinegar to finish it off, and let it cook down a bit. Sometimes add kalamata olives, sometimes chopped marinated artichoke hearts. And sometimes I change up the herbs, but simple oregano should go well with the garlic sauce on the pasta.

It only takes a few minutes to cook with the chicken in small pieces. And you can taste the meat since there's not too much stuff on it. Keep it covered until serving, and it should stay moist.
