Not all of these may be 'new', but I discovered them recently and wanted to share as we veggies have some more options:
POP food court: they opened a flatbread station a few weeks ago, and there is a veggie flatbread, hummus, and a bean dip. POP IMHO continues to be the most diverse food court, with hard boiled eggs, dips, hummus, etc
SSR Artists Palette: has a similar flatbread station with veggie flatbread
The Mara (AKL): a few months ago I suggested that they offer one of their hummus options as the veggie menu here was a little scant. To my surprise, last week I found all 3 that they have on the Boma buffet! Also had a bag of pita chips for about $1.59. I was so happy, and in the cashier line the woman behind me went to get some after seeing my purchase - she told me that she is not veggie but loved the hummus
Tomorrowland Noodle Station:: the veggie bowl was HUGE ie I could only finish less than 2/3, and that after making a mess over myself! It had glass noodles, shredded veggies (cabbage, carrots, and maybe bok choy?), and a seasoned all veggie broth. I did add chili sauce as I like spicy foods. I was their first customer of the day (slow day) but when I left I saw a number of Asian families eating here
Trails End Buffeteria: ok, this is definitely not 'new', but I ended up here based on a recommendation from a fellow countrywomen at Guest Relations. It was near the end of lunch time, but they did a really good job of finding me things. I ended up with some tortellini specially made, which I rounded out with salad, corn bread, and apple cobbler. There was also rice and carrots on the buffet, but I didn't feel like those. The only fruit left was rinds, so I didn't take any, but someone came and left a HUGE plate of grapes, melons, and pineapple on my table, which my server insisted on boxing up for me to take away. Kudos to them for making the effort!
