We went once and it rained and they let us swap to the next party because it wasn't sold out. Our flights just got changed, do you think they would let us change party days? We already bought our tickets, but the newly opened up date due to flights moving would be better for us. TIA.
 
I think you've got a good chance. Call the ticketing line - you'll need to be transferred to a special ticketing castmember. We switched dates in 2023 without much trouble, just had to pay the difference in cost.
 
You will likely be able to swap dates as only the Oct 31st party is sold out at this time but I would call sooner than later to ensure there is still availability at the party you wish to move to. This is only something you can do by calling Disney directly.

I wanted to share a success story from this morning 9/12 ~4:30 am, in case it helps anyone else who finds themselves in a similar bind.

The Problem:
I had three tickets for Mickey’s Not-So-Scary Halloween Party for Thursday, October 2nd. Our plans changed, and we could no longer make that date. Of course, the 10/2 party was completely sold out, so I was worried we were out of luck and would lose the money on the tickets. We needed to go on Friday, October 3rd instead, which thankfully still had availability.

The Solution:
Based on advice I received, I called the wdw number and phone-treed to a CM. I was prepared for a long wait and for them to say no, since the official policy is that these tickets are non-refundable and non-transferable. Wait was 8 min.

I politely explained the situation to the Cast Member, told them which date we had tickets for, and which date we needed to move to. I specifically asked if it was possible to “modify the date” of my tickets and pay the price difference.

To my surprise and delight, the Cast Member was incredibly helpful and was able to make the change for me! I paid the small difference in price for the Friday tickets, and we are now all set for the correct date.

My Advice:
If you’re in a similar situation, my advice is to call Disney directly. Be polite, be patient, and clearly explain what you’re hoping to do. Using the phrase “modify the date” might have helped. It’s not a guarantee, and I’m sure it depends on the situation and the Cast Member you speak with, but it is absolutely possible.

I was so relieved and wanted to share a positive outcome.

Non-trannsferable usually means "you can't give it to someone else," which in the case of Party tickets also means you can't scalp sold-out dates. Disney is usually happy to take an unused ticket and apply its value to another similar ticket of equal or higher value. (They are also happy to exchange an unused ticket for another one of lower value, but usualy they won't refund the difference.) In the specific case of Party tickets, they generally only let you buy another Party ticket with it, not a "regular" park ticket.

Have you or anyone heard of the same? If I had known it was routine to modify dates for special ticketed events, perhaps I should’ve given it a try (modifying two Fri tix to the sold out Thu tix). If they said no, then doing Thu->Fri.

Again, when they are sold out online there are sometimes still some tickets available - you can call, go to the ticketing center at Springs, etc., to inquire about tickets for sold out dates. That was my point.
 
When a party is sold out, guests who hold tickets to that sold out party can sometimes add an additional guest (up to 50% of their party size) but, this is not guaranteed and may or may not happen.
