I was there on what had to be the most crowded night - a sold out 10/31 with good weather. There are two ways to look at the crowds. First, you have reports here from people dissatisfied with the crowding. And, to be honest, if you walked down the streets at certain times, went trick-or-treating / tried to ride Pooh at 7:30, it *was* crowded.
But it was easily possible to tour the whole park without ever dealing with crowds, as it was never anywhere close to full. Early and late in the evening, the park was pretty empty - even the popular rides and special Halloween events (candy, photos, etc) were all either walk-on, or very short wait. And during the peak middle hours, it was only the popular stuff that was crowded. You could eat, ride the less-popular rides, sightsee, etc. without any hassle.
So while smaller crowds are always better than larger, I wouldn't stress too much about avoiding the "crowded" nights.
