Missing WDW--made cheese soup!

Going through Mickey withdrawal lately. I found recipes online for some of my favorite Disney foods--allears.net, the recipes of Disney blog--so I did some serious cooking this weekend. Yesterday, I made LeCellier Cheddar Cheese Soup. It turned out pretty good, and really did remind me of the real deal. We had Dove ice cream bars and Edy's pineapple fruit bars for dessert. Tonight we had Rose & Crown Shepard's pie. Not quite the same, but close. Has anyone tried to replicate anything else at home and been successful? Tonga toast? POG juice? Do tell.

You'll have to share that Cheese Soup recipe ! The closest I can come to describing Le Cellier Cheese Soup is the Cheese Fondue we make every Christmas Holiday (Beer, Garlic, Swiss and Cheddar) !

CRT used to have a Lavendar Chicken that DSD LOVED! I did find the recipe online but we have yet to try it....

On our last trip in January I was looking for a souvenior that would last longer than a shirt or sweatshirt. Since I do the cooking for our family I thought a cookbook would be a good idea. I know a lot of recipies are free online but I had to have something to bring home. I bought Cooking With Mickey and the Disney Chefs. It's been a great investment. So far I've made:

Le Cellier Cheddar Cheese soup
Mom's Meat Loaf (50's Prime Time Cafe)
Flame Tree BBQ Sauce
Chef Mickeys Breakfast Pizza
Tonga Toast (Kona Cafe)
New England Clam Chowder (Cape May Cafe)
Boatwrights Crab Soup

Tonight I made Honey Sesame Chicken from the Nine Dragons restaurant at Epcot. It turned out very well. My kids are normally not thrilled with my culinary abilities but they've really liked the Disney recipies so far. Of course I take no credit for that, it's simply "Disney Magic." :)
 
Me too! I also made the cheddar cheese soup yesterday! :rotfl: We had it the pretzel breadsticks that are sold at a local bakery, so it really was like eating it at Le Cellier. Tomorrow we're going to make the Pork Kakuni (Japan, '11 FW)!

My family also makes Cottage Pie, Raspberry Fool, and Trifle (Rose & Crown), Tourtiere (Le Cellier, long ago), mint julep (Disneyland), Tonga Toast (Kona), Maple Fudge (Canada, '10 FW), Belgian Waffles with Berry Compote ('11 FW), and many more. I have lots of the Disney cookbooks and have had pretty good luck with all of them.
 

We have made the Cheddar Cheese soup w/pretzel bread lots of times. We have found using Black Diamond Cheddar cheese, honey maple bacon and Boddingtons Ale seems to be the combo of ingredients that hits the mark for taste like Le Celliers. DD used to make the pretzel bread, but we now just buy it from a local bakery.

We also make Nine Dragons Honey Sesame Chicken on a regular basis. 1st time it took us 3 hrs, but we learned how to speed it up, now about 1hr 15 mins. But so worth it!

We like to make the Peanut Rice from Boma as a side dish. We have made a sauce that you put on steaks but cant remember which restaurant its from. Made Dole Whips a couple times. We made chicken wing sauce from Ohana and applied it to fried chicken.

We are making a chicken sausage polenta we had at F & W festival this past Oct. this week. We had it once it was a hit so we are doing it again. We made Key Lime Pie from OKW. DD made Grapefruit Cake from Brown Derby. We have made Tonga Toast a couple times as well.

As you can see, we like to do this. Its beyond just the meal, its the exp. that takes us back to WDW.
 
Wow, awesome post I need to get that book when we go.
I have the recipe for the grapefruit cake, so I think it's time to dig it out and give it a try!
 
I've made the Boma chicken curry soup a few times and it turned out well and was easy to do.

Recipe
Cheddar Cheese Soup
Le Cellier
Canada - Epcot

Yield: 6 servings

Ingredients:

1/4 lb. smoked bacon finely chopped
1 medium red onion cut into 1/4 in. pieces
1/2 cup finely sliced celery
1/2 cup finely chopped carrots
3 TB all-purpose flour
3 cups whole milk
2 cups chicken stock
12 oz. grated white cheddar, Canadian Black Diamond
3 dashes Tabasco
1/2 tsp. Worcestershire sauce
1/2 cup Moosehead Canadian Ale, room temperature
salt and pepper to taste
1 TB thinly sliced chives

Method:

1. Cook the bacon in a large heavy-bottomed, non-reactive soup pot over medium heat until wilted but not browned.

2. Add onions, celery and carrots and cook until the onion is translucent and bacon has crisped.

3. Sprinkle in flour and stir constantly for 2 minutes. Stir in milk and stock, a little at a time, blending well to ensure there are no lumps. Bring to a boil, then cover and simmer for 15 minutes.

4. Remove from heat and whisk in cheese, Tabasco, Worcestershire and ale. Season with salt and pepper to taste.

Serve with your favorite bread and top with chopped chives.


I used Belhaven Scottish Ale, and Cabot Aged White Cheddar, because I couldn't find the exact brands above. I would recommend a little more ale and a little less chicken stock.
 
OP here again. I liked that video, it looked so easy! I thought I'd try Tonga Toast, but I don't like the idea of deep frying it. Then again, it's not like it's supposed to be healthy....

We LOVED the chicken sausage polenta from F&W last October! Do you have a link for the recipe? We, too, make Boma's peanut rice sometimes; my daughter doesn't care for meat, so it's her standby "special" dish for Thanksgiving and Christmas! I have also made the coconut chicken breasts with strawberry salad from Kona. The taste is good, but I need to get better at the whole breading and frying thing... not my usual choice for cooking method.
 
Well… great. I didn't know that soup had bacon in it. I can't eat pork- it makes me sick whenever I eat it. :( I guess that makes my choice about LC easy. :confused3
