Meal Planning Sunday

I plan my meals for 2 weeks at a time due to how my paychecks come and, thus, how I can best do my shopping. Right now I am in week 2 of my last plan so here is what I have for the week:

Sunday: Baked chicken legs, stuffing, and green beans
Monday: Leftovers
Tuesday: Meatless hash and eggs
Wednesday: Vegetarian Lasagna (cheese, mushroom, and swiss chard)
Thursday: Leftovers
Friday: Leftovers
Saturday: Meatball sandwiches (using roasted red pepper sauce), roasted potatoes

You just gave me a good idea- I love Meatball Sandwiches- I try to do low carb but that sounds delicious!

It'll be a super easy meal for me. I made extra meatballs and sauce the last time I made pasta so just have to thaw and heat those up and it's done. Plus that means I didn't have to buy anything for them but rolls and cheese.
 
I love this idea! We cook a lot of Crock-Pot meals and grill a lot, and on a good week I'll have everything prepped and ready to go by Sunday evening. It's a lot of work, but it's worth it on weeknights when we get home and are starving.

On our menu this week:

- Salsa verde chicken, http://www.skinnytaste.com/2013/04/easiest-crock-pot-salsa-verde-chicken.html -- This is good for two or three meals, so we will have it in corn tortillas or cook some brown rice and black beans for make-your-own burrito bowls.
- Chicken curry, http://www.recipe.com/chicken-curry/
- Jambalaya
- Frozen Publix white pizza with bagged salad

That will get us through the week, then we typically eat out on Fridays and Saturdays.

Also on Sundays I boil eggs and make these breakfast potatoes for quick and easy breakfasts, and portion out fruit, pretzels, etc. for everyone's lunch during the week.
 

It's Sunday Again! How time flies! I changed things up and decided on my meals Friday, and Went to the grocery store Friday! All of my recipies this week come from the awesome emilybites.com!

Friday Night I made Cheeseburger Soup with Homemade croutons- holy Moly was this awesome!
Saturday: Date Night
Sunday: I'm making skinny tex mex casserole- unless we end up at my parents today.
Monday: Bubble Up Chicken Pot Pie
Tuesday: DBF is going to BW3's for his family guy night, so he will bring me a kids meal
Weds: BBQ Bacon Chicken
Thursday: Turkey Burgers and Curly fries

Like I said, it's rare I cook on the weekends, this week was definately rare. So I never plan meals for those days!

For Lunch we will take leftovers each day, and I made a dozen mickey waffles and froze them, I add Peanut butter to mine, and DBF eats his plain, For Breakfast. I also have cheese sticks, celery and yogurt for lunches also! We always have a selection of Fiber One Bars, Pre Packaged snacks and nuts on hand also! Our night time snack is usually a 100 Calorie bag of Kettle Corn!

Tuesday-
chicken bulgogi - following recipe on bottle of sauce

Wednesday -
soup for me, soup and grilled cheese for everyone else

Thursday-
crustless quiche with a bag of salad mix

Friday -

Saturday-
bbq steak and grilled veggies - usually zucchini, yellow squash, asparagus, and portabella mushroooms

This week is:

Tonight: Fettuccine Alfredo with chicken (purchased at Market District)
Tomorrow: Leftovers
Tuesday: Stuffed acorn squash (wild rice, kale, and mushrooms)
Wednesday: Leftovers
Thursday: Soy and brown sugar salmon, rice, and broccoli
Friday: Pizza (Italian sausage, green pepper, and onion)
Saturday: Leftovers

Lunches with be leftovers and soup (I got a carton of chicken noodle and steakhouse potato from Market District). I also have some stuff for sandwiches left that I can eat if needed. Snacks include apples, pears, bananas, chips and dip, popcorn, and cheese and crackers. My sweet for the week is banana cake with cream cheese icing.
 
I plan my meals out every week; if I don't, we end up with take out every night!

I do my grocery shopping on a Saturday, so my plan goes from Saturday to the following Friday. This is how it looks this week:

Saturday: Baked chicken with tomatoes, onion, and balsamic vinegar. Served over rice.

Sunday: Mickey's Very Merry Christmas Party, so eating at MK.

Monday: Chicken burgers with potato wedges and baked beans.

Tuesday: DH has a vacation day so he's making a big batch of tomato sauce and meatballs! That will be dinner Tuesday night, served over spaghetti.

Wednesday: Chicken parm and penne.

Thursday: Homemade chili over rice

Friday: Leftover chili or leftover pasta/meatballs.

Some of this has to be adapted for DS2, who would eat chicken nuggets every night if he could! Looking at the menu, the only problem I foresee is the chicken burgers; he might get his beloved chicken nuggets that night instead of a burger, but he'll still eat the wedges and the baked beans. Last night's meal, he ate the chicken but picked out every single piece of tomato and onion!
 
The cheeseburger soup and the stuffed acorn squash both sound really interesting. Please share your recipes if possible.
 
Tonight is beef and black bean tacos

Tomorrow is garlic lime pork in lettuce wraps with roasted cauliflower

Tuesday is spaghetti squash, homemade sauce and meatballs, Italian bread, and roasted broccoli

Wednesday will be leftover pork turned into quesadillas, served with candied carrots, and a romaine salad.

Thursday will be chili and crackers

Friday will be whatever is leftover

I will be making a batch of chicken pasta salad here in a bit, so that, with some.fruit, will be lunches for the week.

I should probably make some eggs for the week, too, but my fridge is so full i think I need to wait till after dinner tomorrow.
 
Tonight- steak, baked potatoes. Salad
Monday- chicken enchilada soup in the crock-pot
Tuesday- hamburgers
Wednesday- pork barbecue in the crockpot and edamame salad
Thursday- leftovers
Friday- tacos or pesto pasta
 
Yay for meal planning! I will add our menu for this week, too:

Note - we eat very low carb; I keep mine below 25 per day (I count total carbs, not net carbs - what it says on the nutrition panel is what I count). You could always add a potato side dish or some rice to any of these if you wanted starch! :o

Sunday: crockpot shredded beef taco bowls + all the fixin's (cheese, guacamole, plain Greek yogurt, tomatoes, lettuce, salsa)
Monday: ground turkey Asian lettuce wraps
Tuesday: ranch seasoned grilled chicken + bacon wrapped green bean bundles
Wednesday: leftovers (my hubs takes leftovers for lunch every day as well)
Thursday: low carb pizza night! (we tried many crust types, but cream cheese crust has been our winner for several months now)
Friday: beef bulgogi + roasted garlic broccoli
Saturday: date night (maybe Indian this week :lovestruc)

I don't snack much, but when I do it's usually uncured turkey bacon, quest protein chips, baby carrots, or wasabi almonds. I also love light n fit Greek yogurt, their seasonal flavors are bomb! So good.
 
I'm terrible with this! I live alone, so its really hard to make good meals, because everything causes so many leftovers, and I get sick of them.

My biggest issue is sides. Everything makes a lot. I'm also not able to eat many carbs. They make me feel awful. I'm also getting ready to start my second job back up. Often times I work 5 to 9 there.

I had VSG (similar to gastric bypass) almost a year ago and we struggled for quite a while trying to figure out how to cook and follow recipes without making massive amounts of food. I don't eat much at all and it's just myself and my hubs, so we were running into the same thing with tons and tons of leftovers! I did a lot of experimentation with several of our "go-to" recipes and I have basically figured out how to edit recipes to make less food. So, for recipes that call for 6 chicken breasts, I'll just use 2, and cut down on the other ingredients. This works especially well for casseroles and things like side dishes :o some experimenting might turn out to be helpful for you! Hang in there!

Thanks, its just really hard because I'm bad and buy those Knor pasta sides, and potatoes. Every time I buy a ton of fresh veggies, I seem to throw half away because my life is always changing and I can't have time to cook. I also can't eat a lot of carbs because they've been making me so sick. You would think since I"ve lived on my own for 5 years now I'd have a better take on this.
