Hey Dis Family! I'm not sure if this will catch on, but I would love it if it did. As I am continually looking for new ideas for dbf and myself for dinner! We typically eat out or have family plans on the weekend.
Just a side note I typically try to eat fairly low carb but have slowly been reintroducing them back in my diet. Dbf is a meat and potatoes man but is trying to make healthier choices!

What are you making this week? I am getting my menu together and coming up with my grocery list! I will do the grocery shopping on Monday!


Monday: Grilled Turkey Burgers wrapped in lettuce and sweet potato fries.

Tuesday: high protein pasta served with a homemade meat sauce.

Weds: Grilled chicken on the foreman, baked sweet potato and roasted Brussels sprouts

Thursday: breakfast for dinner- pumpkin waffles, sausage and eggs!


I would love for this thread to take off and maybe we can work together to supply eachother with great meal ideas!
 
I made a kale salad so I have easy lunches. I also cut up a bunch of veggies so I have something easy to grab if I'm hungry. I have a whole chicken I will cook on the rotisserie. I have a spaghetti squash that I will roast and serve with it. Tuesday I'll probably make kofta which is an Arabic type of meatballs. I'll serve it with salad. Wednesday is zucchini stuffed with meat and rice. Thursday is roast beef served with baby roasted potatoes and cauliflower. Friday I'll make something called Molokhia which is a green leafy vegetable which you serve with chicken and rice.
 
Mondays and Tuesdays are the only days of the week DH and I are both working AND not home until 7pm, those are our 'convenience' food nights. Mondays are always frozen thin crust pizza and salad, Tuesdays are either hamburgers or hot dogs with salad and tater tots. I bulk cook my work lunches every Sunday, and once a month I make a huge batch of overnight yeast waffles and the leftovers are frozen for toaster waffles. I've also started making my own desserts instead of buying them because it controls my intake AND saves money. I make my own ice cream, brownies, cookies, etc.

Last week's lunch: roasted lamb shank, peas and creamy polenta
This week's lunch: braised pork, edamame, rice
Tonight's dinner: roasted chicken and salad

Other dinners in our weekly rotation:
Quesadillas, made with whatever meat we have leftover, green onions, green chiles, black olives, cheese
Roasted chicken and brussels sprouts
Chicken and orzo with mixed vegetables
Cheese lasagna
Pasta with sauce and Italian sausage or meatballs
Breakfast for dinner (eggs, bacon, toaster waffles or potatoes)
Beef barley soup with veggies
Mushroom risotto with peas

That all sounds SO delicious! I actually made a batch of Mickey waffles with high protein waffle mix and will eat those with peanut butter in the morning! Wee both take left overs for lunch and if we don't have enough, one of us supplement with a frozen meal or a lunch meat sandwich and some healthy sides! Thank you for all of the great ideas!
 
I really struggle in this area. It's just myself and my son (8). I just put on a pot of tortilla soup. We will eat that until we are tired of it (probably Tuesday or Wednesday). Then I'll make something else for Wednesday, Thursday, and Friday. We too eat out or have other plans during the weekend.

I typically use a website called emilybites.com for my recipes. It's great and everything I've made has been top notch!

I had to look up Kofta but it sounds delicious! I'm going to make it next week I hope!
 
One of my favourite new meals is Bobby Flay's Greek Quinoa Salad. I often eat it as is for lunch/dinner for myself, but I have also served it as a side with grilled chicken. A similar style of salad, but with different flavours than the Greek version, is Zesty Quinoa Salad. I have made both of these higher protein salads and can vouch for both recipes turning out as written.

With autumn here, I find myself serving soups with some kind of artisan bread at least once every couple of weeks. The recipe that is most enjoyed in our family is a chicken and wild rice soup that you can serve as a broth-based soup, or add some cream or half-and-half to at the end to make it a creamy wild rice soup.

At least once a week I find myself serving some version of pan-fried chicken breasts (just browned in a little olive oil) and then make a pan sauce with the drippings with dishes such as chicken piccata or chicken marsala. If you are looking for a great chicken recipe to grill on your Foreman, you should try Wolfgang Puck's Lemon Chicken Thyme Kabobs. They are fabulous! And so easy too.

I look forward to seeing what other suggestions you get. I always enjoy discovering new recipes that can inspire my cooking again.
 
I got all our meat for the week ready today. I fired up the smoker this morning & smoked 2 whole chickens. Then, shoveled the coals to the grilling side & made burgers (1/2 plain, 1/2 with sauce) and fajita/lime chicken tenders, then grilled steaks for supper.

Inside, browned a pound each of burger & Italian sausage for tacos/spaghetti later in the week, and also made a pot of chili.


Occupied a lot of my day, but now all we need are sides & some prep work for the week. And actually, we ended up freezing some of the food 'cause I kind of overdid it LOL

That is AWESOME! Much more productive than my day! I can be leery when it comes to eating meals that have been frozen or in the fridge a couple days. I need to get over my fear and start meal prepping like you!
 
I usually just plan out Monday through Wednesday nights on Sunday and then plan the rest on Wednesday. Monday and Wednesday I'm in accounting classes, so those are crock pot meals or something quick.

Monday: Beef stew in crock pot (I will usually only eat the beef, carrots and steamed broccoli in a bowl)
Tuesday: enchiladas and spanish rice. I eat half of one with some veggies.
Wednesday: spaghetti and sauce with garlic bread
Thursday: chicken, roasted potatoes, and asparagus
Friday: homemade pizzas
Saturday:
Sunday:
 
My goal is to make double batches of some of these meals and freeze for convenience.

I am starting with the enchiladas, broccoli soup, chicken pesto Alfredo, and the burgers. I may even make triple just to have some easy things on hand.

Not sure if I can do it this week or next. This week I have to get the house clean enough for people to show up on Wed. to work on my son's eagle project in our basement garage/workshop, but they will be coming in to the house too.

If I can't do the above, my week will probably look like this: (since this is a typical week for us)

Monday: grab food on the way to scouts
Tuesday: rice and potstickers
Wednesday: burgers on grill
Thursday: Tacos/burritos
Friday: pizza or something very easy
 
One of my newer go-to meals for when we're pressed for time or truly don't want to cook is hummus wraps. I've used pita or tortillas, spread with hummus and then I used leftover roast chicken or rotisserie chicken with baby spinach or romaine, shredded carrots, sliced cucumber and diced avacado. Feta or shredded cheese can also be added.
 
I wish I could plan a week's worth of meals at a time. I'm more of a day to day person. We all have different schedules in the house so it's easier for me to do things one day at a time. Tonight we are having turkey mini meatloaf with dijon glaze, baked cauliflower and mashed potatoes. I'm borderline high blood pressure and DH and I have borderline high chol. so I've been learning to make different recipes that still taste good but are better for you. Never in a million years would I think that I would actually like turkey meatloaf. I'm super picky but am trying to branch out a little at a time.

I make almost everything with Turkey Meat. My local Kroger had lean turkey on sale 2 for 5, so I stocked up! I honestly can't tell a difference. DBF says he can, however I think it's because he knows it is Turkey! :) Have you tried Cauliflower mashed potatoes? if you google thesweattybetty.com- she has an AWESOME recipe!
