Okay this isn't really a recipe but it's a good low point lunch... I don't know if you like this kind of stuff but I bought a bag of Mission low carb fajita size tortillas (1 point each), a pack of healthy choice sliced deli chicken (1 point for four slices) a bag of shredded lettuce (0 points) and fat free Thousand island dressing (1 pt. for each tablespoon) and basically made two wraps with them for lunch (I took 2 of the tortillas put 1 tbsp. of the dressing on each then shredded lettuce, then 4 slices of the chicken on each and rolled them up and ate them both. And the whole lunch (both wraps) was only 6 points total. Just thought I'd share to give you some ideas.
