Never been here before, but would love to try our Magic Kingdom day instead of the very-pricey Citricos.
A few questions:

1. Don't want to take long periods of time eating...average start to finish meal time-just entree (no family style)?
2. Sorbet flavor..is it seasonal or is one flavor? I have been searching all over Disney for a coconut sorbet and only found a few (pricey) restaurants who offer it-I know it offers sorbet-but not sure about coconut.

General Restaurant Question:
Is it possible to request a specific dish at Disney (i.e. Citricos, The Wave or LTT)? I also have a special vegan diet so would I be able to request it?

I don't get what you are asking here. Are you talking about LTT lunch (a la carte) or dinner (family style)? If that's the case, are you asking if you can go to the family style dinner and ask just to have an entree to save time? I suppose you could try but you'd pay the same price as you would for the full dinner. Or are you asking about lunch? Of course at lunch you can order whatever courses you want specifically.

And then in the next paragraph you mention a special vegan diet - you'll have to go through Disney Special Diets for that because as far as I know Liberty Tree at dinner doesn't have any vegan entrees and I am not so sure about lunch.
 
I just realized that you can't order a la cart at LTT-bummer!! (Essentially, I wanted a pot pie and a coco sorbet [possibly seeing if it was an option to request it b/c of special diets] for dinner instead of Citricos. Guess I'll have to work my plans out differently.
 
They have the veg pot pie at lunch time, so you CAN order it for LUNCH. Just make the latest lunch ADR they allow and enjoy.

As for the coconut sorbet, I think you're out of luck unless you go to one of the restaurants where you've seen it listed.
 

1) MK eateries are for the masses.
2) Not the individuals.
3) Sure, they can do vegan or veggie foods.
4) But, not off-menu items or special dishes.
5) Only signature eateries do such.
6) And, they are limited for special dishes.
 
In February the sorbet was raspberry and was served with a variety of fresh berries. My 13yo LOVED it. I don't know if all restaurants with sorbet work the same way but I was speaking with a chef at HBD recently and he said they tend to rotate between a few different sorbets depending on what fruit they get in but he did only list fruits such as raspberry, strawberry and mango. He didn't mention coconut. If you're looking specifically for coconut, I'd go where that flavour is specifically listed on the menu.
