Late seating at Princess breakfast question...

I have only eaten at CRT once, and I got a PS on my first call. Now that they have made the last seating later, we might like to try again on our next trip. My kids love breakfast food more than dinner buffets, but we don't like to use our mornings for sit down meals. We thought the last seating at CRT or in Norway would work well, giving us the morning to do some rides, and then use that for lunch. My question is this, I always see people are asking for the earliest seatings, how hard is it to get a PS for the last seating??

Our PS was for 10:00 a.m. this past February. We loved it. We got to ride all the rides around the castle (mostly walked on that early), then went to the breakfast. It was really great.
