Our flight is scheduled to arrive at MCO at 10:40.

I'm going to assume 90 minutes using the Magical Express to get to our resort POP. 12:20

We want to spend time at the most 2 hours at Disney Springs as well as visit
Old Key West, Wilderness Lodge, Grand Floridian, & maybe Beach club/Yacht Club.

(BTW, we are going at Christmas time - so our 2 fold purpose is to see the decorations & visit some of the VC resorts)

Since our morning is starting pretty early, I'm pretty sure we are going to run out of gas by 7 or 8 that night but I would like to end with a nice meal since we are on the dining plan.


I should mention that this is just me & hubby.
 
Doable yes...realistic, doubt it. Bus waits will make it very tight.
 
It doesn't even sound like fun to me. Way too much traveling. WDW is huge. You will spend lots of time in transit. I would focus on one area - DS, MK resorts, Epcot area resorts, etc. Or maybe DS & 1 other area.
Even if you arrive at Pop by 12:20, you still need to check in etc. I don't see you starting out until close to 1.
I would suggest you catch a bus to the MK and take the Monorail or boat to the Poly check out the decorations and grounds there. Then walk over to the GF and checkout the Gingerbread House. The grounds and lobby are beautiful too. It is amazing. From there you can catch a bus to DS and spend some time exploring. End with a nice early dinner at one of the many restaurants in DS. We love Raglan Road but we haven't tried any of the new restaurants yet.
I think you will be really ready to head back to Pop by now.

Thanks.- ..I should have mentioned that we planned to use Uber to get around for the most part. I know busses don't run from resort to resort. We are looking to purchase DVC - and it will probably be resale, hence we are going to check out a few of those properties. It's just an added bonus to me that the Christmas decorations will be up.

I didn't catch the dates that you are going, but even with Uber during Christmas, add time for traffic. I drove around WDW one Christmas, and even without Disney Springs construction, drive times did not offset WDW transit. It will be tight. I believe that @Hopefully has a good idea. Make it over 2 days and then spend more time at the resorts. Not going to see a lot in a short time and will probably miss things because you are on a time limit.
 
It's do-able, but too much rushing around for my taste on arrival day. Your time at each resort would be very limited. I'd spread it over a couple of days, especially since you're doing this to check out DVC resorts. In one afternoon, you could easily hit GF, Poly and CR/BLT, then take the boat from CR to WL. The next day, do DS, OKW, maybe SSR (since it's right there), and then head up to YC/BC, BWV.

I know you mentioned specific resorts that you were interested in, but it doesn't hurt to look at more. Many a DVC member has been surprised to find that their favorite resort ended up being one they hadn't even considered.

If that is your goal - here's what I'd do. On arrival day take Pop's bus to DIsney Springs. From there boat to OKW and wander around to get a feel for OKW. Boat back to Disney Springs and walk over to SSR to check it out. You can reverse the order. Consider dinner at OKW or SSR or boat back to DS and have dinner there - Raglan road is a blast & you've experienced 2 of the 9 WDW DVC resorts. Uber back to Pop.
On your Epcot day head out the back gate (between France and England) and walk over to the BCVs. Be sure to look into the BC lobby where they have the wonderful chocolate carousel. You can tie the visit in w/ an ice cream break at Beaches and Cream. Be sure to take the friendship boat across the small lake to the BWVs just to have a look around (or walk - it's close.) Go into and through the lobby to the back to see the bus stops area, then over by the clown pool. Note if you take the 20 min. boat ride between Epcot and DHS you'll go by much of BWVs. Now you've seen 4 of the WDW DVCs.
On your AK day plan dinner at Boma or Jiko in Jambo house or Sanaa in Kidani and take the 5 min bus ride over to AKL/AKV. Be sure to visit both Jambo (which has DVC on 5th & 6th floors) and Kidani which is all DVC. Go out back to look at the animals on the savannas. Then when you're done with dinner bus back to AK if it's open or Uber back to Pop. That's 5 DVC resorts visited.
On an MK day plan for dinner at Wilderness Lodge or take a break mid day and grab the boat at the front of MK over to the Wilderness Lodge. They have an awesome Christmas tree in the main lobby. When you've seen enough bus or boat back to MK to finish your day in the park, or if it's a MVMCP MK night bus to your next park from WL.
On another MK day take the resort monorail and get off at each of the resorts to check out their DVCs. At the Poly check out the grounds/DVC then maybe grab a Dole Whip at Captain Cooks, at the GF enjoy their Xmas lobby decorations and then stroll over to the VGF building and wander into the DVC lobby to see the cute penguin fountain, note you can walk between the GF and the Poly but it's a bit of a hike, finally monorail over to check out the CR and see BLT then monorail or boat or walk back to the MK.
This way you integrate visiting DVC into your normal vacation routine plus get a feel for transportation options from the various DVCs and you'll have at least seen them all to decide which is the best fit :)
