Inspired by jfulcer -- how do you prepare Zuchinni?

I'm trying to work in extra veggies to my meals. I love zuchinni --- how do YOU prepare it?

I like to stir fry with a little butter and onion then top with a little cheddar cheese.

I buy the green zucchini & the yellow squash (which looks just like the green zucchini) & slice it up in 1/4" slices. Then I layer it in a baking dish (alternating colors) & pour some pesto sauce on it (made with olive oil, garlic, parsley) & then sprinkle some flavored bread crumbs on it & bake it till it's soft (about 30 to 40 mins at 350 degrees). OMG, is that ever delicious! Even my 7 y/o loves it!
 
Mmmmmmm I love this too! I dip slices in an egg and milk mix, then into corn meal, then I used to fry it but no more fried foods for me so I bake them in the oven on a cookie sheet with a little oil sprayed on to get them brown. Mmmmmmmm! One of my favorite dishes!
 
Somebody with a garden gives me zucchinni. It sits in my fridge for a long long time. I go to clean the fridge, and find a slimey zuch. I try to take it out but it is reaaallly gross. So I try to get iit with a papertowel but it is like disintegrating. Eventually it makes it to the trash can.

I guess I really don't like zuchinni. The only way it is bearable to me is as bread.
 

I mostly stir-fry it with teriyaki sauce, but for a treat every now and then I make zucchini parmesan. I cut the zucchini into slices and then I dip them in egg, then I dip them in a mixture of bread crumbs and parmesan cheese. I bake them until they are tender, then top with tomato sauce and more parmesan cheese. It may not be the healthiest way to eat them, but it sure is yummy.

I saute sliced zucchini in butter with onions and garlic. When it is almost done, I add seasoned bread crumbs. It makes it like a stuffing, or dressing of sorts. Very yummy.

I think I'll try the pesto-bake, too. That sounds so good, Mishetta! Actually, they all sound wonderful, but this is something I'd never considered.

This is how I prepare mine as well. Except instead of bread crumbs, I add fresh grated parmesano reggiano cheese.
 
All those versions sound yummy. I am boring and just steam it and put little butter on at the end. I love zucchini. :D

it's delicious that way. i also like it cooked in butter with some shredded mozzarella cheese on it.
 
During my pre low carb days I made a wonderful casserolle to take to pot lucks. It always received rave reviews!

Saute onions in butter and spread along bottom of casserole

Next layer is crumbles saltines or ritz crackers

Then sautee'd zuchinni slices

Top with various cheeses (we use cheddar)

Just cover with milk

Bake until bubbly
(it will be on the firm side)

YUM!

Another veggie I don't like.:eek: My mom slices hers up and breads them with a cornmeal/flour mixture and fries them. She also likes to make zuchinni bread with it.
 
Wovenwonder, that sounds delicious.

I make them a lot of ways described here, but DH and I also like it cut into pieces and added to stewed tomatoes.
 
I usually just steam it and sprinkle it with a little salt and parmesan cheese. My older son's eyes used to light up and he'd yell out "nini!" - he hates it now, but he loved it as a little guy.
 
This may sound weird but I like to grate the squash and then sautee in olive oil and sprinkle a little nutmeg on top. It's yummy and very low in carbohydrates :)
 
Squash Casserole serves 8

4 1/2 C. Zucchini (diced)
4 1/2 C. Yellow Squash (diced)
1 1/2 C. Yellow Onion (chopped)
1 Box Jiffy Corn Muffin Mix (prepare as directed on box)
1 1/2 Stick of Butter
8 oz. American Processed Cheese
3 Cubes of Chicken Bouillon
1 tsp. Garlic (minced)
1 tsp. Salt
1/2 tsp. Ground Pepper
1/2 tsp. Thyme
1 Tbsp. Parsley (chopped

Prepare Jiffy Mix as directed, set aside to cool.
Place zucchini and yellow squash in a large saucepan and add just enough of water to cover. Cook on medium low heat just until tender, remove from heat. Drain squash, reserve one cup of water for casserole. On medium low temperature place all of the butter in large sauce pan and sauté the onions until the onions turn clear, add salt, pepper, thyme, and parsley. Add chicken bouillon cubes and garlic to onions, stir. Add drained squash and diced cheese, stir. Crumble corn bread in squash and pour the reserved cup of water and mix well.
Place squash mixture in a 13"x11" baking pan that has been sprayed with a non-stick spray. Cover casserole and place in a preheated oven at 350 degrees. Bake for 50 - 60 minutes. Remove cover the last 20 minutes of baking time.

Note: if you tend to prefer less butter, please add less than is suggested.
 
Slices of red onion, fresh tomato, zuccini, layered in a glass dish, with a little butter, oregano, garlic,salt and pepper... then just nuke it in the microwave until everything is tender.. pretty yummy and not many calories...
 
I cut it up, add onions, green peppers, and some mushrooms, season it, and put it into my grilling basket and then onto my Gas Weber to grill. I've also added sweet potatoes to this, really good! I always try to prepare veggies without butter and without frying at DH's request.
