Incredipass Questions!- Need help on logistics

I have never purchased an annual pass before. Logistically I have a few questions.
I am going on one definite trip purchasing an 8 day park hopper ticket from December 4-11.
I am probably going on a trip purchasing a 5 day park hopper ticket from April 10-14 2022.
I did the prices of the two tickets and it adds up to 1312.91.
The Incredipass (with Memory Maker) would be 1488.87.
If I got Memory Maker for both trips that would be another 338 dollars and put my ticket and Memory Maker at 1650.91.
Right off the bat that's a savings of about 162 dollars on the Memory Maker.
My questions are as follows:
How would I got about replacing a ticket for just me on our family trip with a Incredipass?
Is there a list of restaurants that offer the 10% discount for AP somewhere easy to find?
Is all merchandise 20% off at Disney Park stores? Is there a list of what usually is discounted?
How often do annual pass discounts come out (I know things are different in these Disney NO DISCOUNT days for hotels)?
 
You can upgrade your tickets to an annual pass by calling Disney or going to the park customer service (outside the park) before you tap in on your first day.
I think most sit down restaurants offer the 10% discount- just not quick serve or food at the carts (like popcorn or food carts at Epcot)
I also think most merchandise at the gift shops are discounted. I imagine there are some exceptions- but I have not encountered any
The other benefits I like of being an AP are VIP passholder nights and passholder previews.
My daughter and I had AP in 2019 and were lucky enough to attend a VIP night and the Star Wars land preview. So much fun!
 
If you have a package (resort+tickets) booked for December, you will need to wait and upgrade onsite. If the tickets were purchased separate from the resort, you can call and upgrade by phone in advance.

I actually called last night because I wanted to pay with discounted gift cards I purchased from Target and they just removed all my tickets from my package (and Memory Maker) and then let me rebuy the tickets for the rest of my family on the spot. That worked out fine for me since our final payment is due soon.

Yes, that's an option if someone is ready to paid-in-full for all tickets. But if they want to leave the tickets on the package reservation, they cannot upgrade just 1 in advance.
