Nancy, so cool. Glad that Seth is able to pursue his dreams!
EE, glad that you finally have help!
Work for me is really, strange, lately. I think that no matter what happens that it will wind up good for me (well, hoping anyhow), but the transition period that we are in right now is just odd. Oh well, hopefully we will get through it soon.
Food is still going well. I made pumpkin sausage soup today, and froze about half. Here is the recipe:
2 32 oz cartons of chicken stock + 2 cans of chicken stock (yeah, what was in my pantry)
1 large (29 oz) can pumpkin (NOT pumpkin pie mix)
~8 oz mushrooms
1 celery bunch
1 medium onion
salt, pepper, italian seasoning
14 oz turkey breakfast sausage (mine is 600 cals in 16 oz)
3/4 cup sour cream
Brown the sausage in a large soup pot. Process the onion, celery (all bad parts removed), and mushrooms in the food processor until all finely chopped but not pureed, then add to the pot and brown, stirring. Add about half the chicken stock, bring to a boil, and simmer for 5 min or so. Add a generous amt of salt, pepper, italian seasoning and rest of the chicken stock, bring back to a boil, then slowly stir in the pumpkin. Simmer for about 15 min. Remove from heat and add the sour cream.
Mine made 18 cups, ~55-60 cals per cup.
