Racing - I have NEVER been to the Races before, DH goes sometimes, he loves it! Me and my two best friends are going to Ladies Day in September, I am beyond excited! Ladies Day means the full works though - dress, hat, heels! Me + Heels + Grass = Disaster :lmao:

CHALLENGE - I am doing surprisingly well on the challenge, I can give myself a big CHECK for exercise, water and tracking - long may it continue!

As for the races, you will love the atmosphere. And for shoe choices I say go with a wedge or something with a beefier heel. Stillettos and grass are a scary combination. If it helps, I am wearing loafers... Oh and we must have pictures of Ladies Day...

Well, it's been far from "warm" here this summer. They were saying on the news the other night that we typically have 18 days of 90* + weather here in Connecticut. This year we have had ONE. And that was at the end of April. It's the very end of July and I just went in the pool for the 4th time all summer.

Any time I feel down like that, I go for a walk. It makes me feel better, I don't 'emotional eat', and I get a little extra exercise in for the day. I try not to 'punish' myself anymore. I used to though... oye!! There was a dark time in my days when I would do that and boy o boy it was not pretty! Now, I think of food as fuel, not recreation, and my calories are to be spent WISELY on QUALITY foods. If I want chocolate, I eat high quality organic dark chocolate. If I want ice cream, I blend together frozen bananas and fresh strawberries in the food processor to make a yummy treat! Oh the mental game of it all!!!! :upsidedow

Very appropriate and actually a topic I spoke with my sister about last night. Loving someone means accepting them - flaws and all - but it does not mean to open yourself up to their baggage and carry it for them. I do not need to show him I love him by enabling destructive behavior - no different if he was a drug addict or alcoholic.
The night before I had some intense dreams.
Lisa - must be in teh air - I have been dreamin crazy stuff teh last week - I never remember my dreams. I hopre yo find the inner peace you seek out and put your finger on what might cause this.

Great job! Very exciting and sorry - no remedy that I can offer for skunk smell. One of our dog's name is Skunk though - it made me laugh!

Stephen is in a "decrease spending" mode right now (possibly because of all those shoes???:rolleyes1) and thinks we should go the whole summer without turning on the a/c. :eek: Granted, we haven't needed it until this week....so I'm currently sweltering in this nasty soup!

We have done that too here. No shoe excuse though - just cheap - it has been over the top a few days but the nights are cool and the basement is definetley cooler.

Kick some booty this week and get out of that funk - I know it too well and it usually adds only to more food than I should have.

Off to pick up Skyler today - my sister and Skyler's dad are no longer together - she moved out in the beginning of July - It is a mess and I am trying to give advice and take no responsibility in what she does with it.

I forgot to tell you all that Sunday night - Carsyn and Baylor started playing in a Special Olympics "training" games for soccer. The Special Olympic team members are anywhere form 18-42.

It is the hope from the coaches that some of their top players can gain better knowledge of the game and give some more time to those who have more severe handicaps to play. The better players from all the teams are pulled for a game against kids in middle/high school and they play 30 minute halfs. The rule is the kids not a part of Sp. Olympics can only pass/shoot with their non dominate foot. Plus they will not play as aggresive in many situations.

It was super fun and the kids really enjoyed it. Carsyn got mowed down from a guy that is 21 and 6'2 and abbout 235. She was worried about making them feel bad if she out-skilled them and then she realized she needed to watch her own hind end and forget the sympathy.

Baylor was a little shy at first - and then a woman in her 20's came up to him and said she would take it easy on him since he was a "shrimp." :lmao:

If anyone has seen the movie "Ringer," I felt like I was watching a segment of that! There was a man about 22 I am guessing - who has Down's and he cracked me up.

These "Top" players in their normal teams - were not walking all over these guys and he was not happy. After about 5 minutes of play - he crossed his arms and walked off the field - in the middle of the game. His coach asked him what he was doing -he answered,
"This is B.S. I can't even score a lot."

His coach said - "This is to help all of you improve your play and passing. How else are you going to get better."

He said, "I really don't care cause my girlfriend is not going to kiss me as much cause she only kisses me when I score."

His coach was laughing - he was muttering mad as heck - "you screwed up my love life and that is just great!"

Then the other guys from his team were giving him grief from the field as the game was going, that he was "whipped."

I have not laughed that long forever.

Anyway - this is something that will go through September. We hope that the Special Olympic players will come to some of the kids games to support them. It would be a great connection if this would happen.

Well, I'm hoping this day improves, because if it doesn't......heads may roll!

Last night, about 9ish, my husband and I were watching tv when we heard a loud "crack" sound -- well, we went rushing around, trying to figure out what had crashed or fallen or whatever......couldn't find anything.

Woke up this morning to find that both the refrigerator and the coffee maker are dead. WTH??? Both electrical sockets are working. I can tell the fridge is getting power because the digital display is flashing, but it won't reset and it's not cooling anymore.

My best guess is that we got some kind of power surge that zapped my appliances. Weird but I guess it could happen.

No biggy on the coffee maker, but I sure hope the Sears guys can fix the fridge when he comes out tomorrow morning. It's only 5 years old. And although we moved the freezer stuff out to the garage freezer, and put the dairy stuff in our big cooler with lotsa ice, I suspect we're going to lose some food in this process, too. Sucks!!!!

Okay, done b!tching now. Carry on. :laughing:

I live in a warmer climate, and yet, no pool! For some reason, people around here just don't have them. A lot of subdivisions have a community pool, but individual pools are hard to find. I, alas, have neither. :sad1:

I tried a new recipe tonight. Vegan Meatloaf and Gravy. I posted the recipe and pictures in my blog at http://anniessimplelife.blogspot.com/2009/07/vegan-meatloaf.html, but here it is if you want to try it!

Ingredients:
15oz can black beans, drained and rinsed
1 onion, diced
2 garlic cloves, minced
1 large carrot, skinned and shredded
2 celery stalks, washed and shredded
1 cup coarsly chopped brown mushrooms
1 cup cooked quinoa
1 tbsp italian seasoning
3 tbsp brown rice flour (or whole wheat if you prefer)
2 tbsp low sodium soy sauce
2 tbsp ketchup

Directions:
1. Preheat oven 350F and grease your pan
2. Mash black beans in a large bowl
3. Combine all ingredients, stirring until even
4. Pour into pan and using a spatula, pat down firmly and tightly
5. Bake 35 minutes for minis, 45-1 hour for regular loaves
6. Serve with your favorite gravy if desired


Gravy Recipe

Makes 2 cup
Ingredients:
1/4 cup nutritional yeast
1/4 cup whole wheat pastry flour
2 cups mock beef or vegetable broth
2 tbsp low sodium soy sauce
few dashes of black pepper
1 tsp onion powder
1/2 tsp garlic powder
salt to taste

Directions:
1. in a small skillet, whisk nutritional yeast and flour together and toast over med heat, about 4 mins (until it smells toasty)
2. transfer to a med sauce pan
3. whisk in remaining ingredients
4. bring to a boil and allow to thicken to desired consistency

Does anyone have a great remedy for a dog vs. skunk attack? I took Max out this morning at 4:30 to get the paper and he met a little friend in my neighbors yard. I don't think he got full on sprayed because I didn't smell it until I was back in the house. Sooooo, he's had a bath with regular doggie shampoo, but Thomas says he can still smell skunk. I don't really smell it, maybe my allergies are really that bad, or I smell too and DH just didn't want to tell me.

Any suggestions?

Hazy, hot and humid here today as well. I am off from work for the next three days - YEAH!!!! Just got back from a quick cardio workout at the gym - intervals rock - and am off to get ready for my day at the track. I am bringing a camera so hopefully, will get some good pics. We'll see.

So I feel super back on track today....got my normal, GOOD breakfast of boiled eggs and apple juice ( I know the actual fruit is better than juice, but I can't stand eating apples, I know, I'm weird :P) and going to make a new chicken enchilada cassarole kinda thing recipe I have for dinner tonight.

One question...I forgot my lunch today and we are ordering chinese at the office...what is a healthy chinese food option? I always make sure to get something with lots of veggies and get steamed rice instead of fried, but not sure which dish is the healthiest? :confused3

I got past my chocolate-vat face shoving mood from yesterday:yay: I was still really upset about my friend who had just gone off on me, we haven't talked since that day we had the fight, despite my best efforts. She kind of just decided she didn't want/need me in her life, and it was really bothering me. It's hard and hurtful to see someone not want anything to do with you when you cared about them alot, KWIM? But I've been praying my face off, and really trying to get through it, and finally came to the conclusion that even if she DID talk to me, it would be more for closure on my part, because things will never ever be the same. That's actually a bit more comforting than hoping that I could have my old friendship back.

Started working on the Caillou cake last night:woohoo: It took me FOUR hours to build the little Caillou figure dude, but I'm pretty pleased with the way he came out. Love playing with fondant. It's like grown-up playdoh, only stickier :cloud9: Tonight I'll bake the cakes and wrap them and put them in the fridge to cool, then tomorrow I'll build and frost it then Friday I'm dropping it off, and then Saturday when I get there for the part I'll put it all together. I am EXCITED! I'll make sure to post pictures for ya'll when I get it all put together.

Oh, and I got the "apology letter" from my brother yesterday, the one my mom told him he had to write...Yeah....that consisted of about 10 sentences and was basically just like I did this and this and this and oh yeah I'm sorry. It wasn't really heartfelt. It was pretty lame, as a matter of fact. And the stuff he did put in there, isn't really even the big stuff, I just don't think he really gets it through his head how he has affected people through the crap he's pulled. It's not just about the stealing, but about how he's turned people's lives upside down. Hopefully eventually he'll get it....one day.

Hi Toledo--I am the resident organic veg-head here :goodvibes (though not Vegan. I eat dairy products, etc. but no meat in any form). One of the things that works best here is that we all share what works for us individually and encourage each other to do what works best for THEM. It isn't always the same, kwim?

I have had my face shoved into goat cheese lately. No idea why but I am SO into it.


How many boiled eggs do you eat? One of my more fav things to do if I have time, is to either make a veggie-filled egg-beater omelette (yes, weekends only), or, for a fast fix... Take a microwave-safe bowl, spray with cooking spray or equivalent, and add 1/4 cup egg beaters. Nuke for 1 min, then sprinkle with a bit of shredded cheese. Fold over the result and either eat as-is, or add to a multigrain english muffin or sandwich thin (~100 cals). 150 cals or so and filling. I sometimes sprinkle some reduced fat bacon bits on there (the kind you get in the salad aisle, real bacon but prepackaged into bits).

Lately I am really into eating "brunch" on weekends. Bisquick makes a heartsmart pancake mix, that makes wonderful lower-cal lower-fat pancakes. Sometimes I crush Fiber One original into powder and do a 1-to-1 subsitution. The pancakes aren't as fluffy but you are adding TONS of fiber that way... I also add blueberries or strawberries, and use sugar free syrup.

What do you do for chicken enchiladas?

I take chicken (or pork) and either crock pot it or boil it with one sliced onion, one can of green chilis, chopped cilantro, a glop of enchilada sauce, and spice to taste (texas pete, jalapenos). Fill the rest of the pot that you are using with water, and then boil or crock pot down until it falls into shreds.

Then, take the rest of the enchilada sauce, pour half into a shallow baking dish, and use as many corn tortillas as your calorie count or points allow. Dip the tortilla into the sauce, fill, roll, repeat. Bake at 350 for 15-20 min or until warm, and top with chopped onions, ff sour cream (or greek yogurt), and a sprinkle of 2% shredded cheddar. Yumm.

I hear ya on life getting in the way.

Definitely in agreement on the encouragement to what works best for the individual. We have folks here on Jenny Craig, on WW, and those who eat whatever but exercise like fiends. I almost see eating choices in the same way that I see politics or religion... I will tell you my philosophy when asked, but I don't volunteer it, and I agree to disagree with those that I call friends (hi E! :wave:).

Personally, I am far from vegan/organic but I do see the value in eating less processed, more veggie/fruit as part of a healthy lifestyle. However, that doesn't always keep me away from the candy bars, beer, and cheese fries. ;)

I forgot to tell you Cathie - I loved your cake/candy pictures! I didn't look at them until I got home from work - I cant look at cake pictures at work, if I do I end up face down in the Tin O' Sin! :rotfl:
