If a recipe calls for 1 egg and 2 egg whites, what does that mean..3 eggs? Also can something else be used instead of heavy cream? Thanks!!
 
It means that you need to put one egg in and seperate the other two eggs, throw out the yolk and only use the white.

One whole egg and two egg whites. If a recipe calls for heavy cream I use at least half heavy cream coupled with whole milk. Whatcha makin'?
 
Yes 3 total eggs would be required, but 2 would have the yolks removed.

As far as the heavy cream- it really depends on the situation.

Yes, it means 3 eggs.

You could substitute regular whipping cream for heavy cream, but it won't be as rich.

I have some bananas that are about to go and the girls don't want them so I thought I'd make some banana bread. It calls for 1/2 cup of heavy cream, but I am out of it and since its snowing would rather not go to the store LOL. Can I substitute anything else for the cream?

Also can I substitute regular milk for buttermilk? I planned to make some cinn. rolls from scratch this week and it calls for 3/4 cup buttermilk which I hate.
 
Yes - you need 3 eggs: 1 using the entire egg (white & yolk) 2 using just the whites (seperate the yolk from the egg - use later in something else.)

A substitute for heavy cream (1 cup) is 1/3 cup butter plus 3/4 cup milk - whole if possible.
Frankly I would go for the cream - just tastes better IMO. Good luck!
 
I would substitute yogurt for buttermilk or a combination of yogurt and milk.

Bettycrocker.com has a really good banana bread recipe that doesn't call for cream at all and it is SOOO moist. If you are concerned with the substitutions you could use that recipe.

Thanks, I'll go check it out (thanks for the recommendation). I saw some other recipes at kraft, but since I have only used the one recipe I have I didn't know if they'd be as good LOL.

for buttermilk you can use regular milk with some white vinegar added...can't remember the ratio, but I'm sure its online somewhere.
 
You can add vinegar or lemon juice to the milk to make a substitute for butter milk. I think it is 1 Tbsp vinegar or lemon juice per 1/4C of milk.

You should also be able to use this substitution for the cream in the banana bread. My recipe calls for buttermilk and I just make sour milk and use that.
