how much do you bug the closing company for updates

What reason would a seller have to wait until the closing date to sign and return closing documents. I was very quick to fill out all paperwork througout the process. They have until later this month to close. Its been two weeks since I returned all the necessary funds and paperwork.

In addition to having to get to a notary, they also may need to bring funds to closing which might delay them as well.

We have sold and a few times, it took us a week to 10 days to arrange our schedules to get to the bank to have the documents notarized. I also bought a contract and the owner was in the Navy and we had to wait until he was back on shore to do it...
 
I can see a seller taking time to gather any cash they need to bring to closing, but the notary excuse just doesn't fly for me. You can get documents notarized at literally thousands of UPS stores across the country (foreign sellers aside). With a couple of hours' (and at most a day) notice, the store can usually tell you when another employee, to serve as a witness, will be there in addition to the notary. Worst -case, you might need to find another warm body to serve as a second witness (although for many documents, the notary can also serve as a witness).

I have deposition transcripts, declarations, and yes, DVC contracts, notarized at 2 or 3 different local UPS stores on a very regular basis.
