The April issue of Good Housekeeping has a recipe for Asian honey-barbecue tilapia that I'm going to try this weekend. I'm sure you could use any mild white fish though. Here's the recipe:
1 8oz can crushed pineapple in juice, drained
1/3 cup finely chopped onion
1/4 cup honey
3 TBS soy sauce
2 TBS hoisin sauce
2 TBS lime juice
2 TBS white wine
2 tsp grated fresh ginger
1 1/2 tsp cornstarch
2 jalapeno chiles, seeds and membranes discarded, finely chopped
1 garlic clove finely chopped
4 tilapia or snapper fillets (about 6oz each)
- preheat oven to 425F
- In medium bowl combine all ingredients except fish; stir until well mixed
- In 13"x9" glass or ceramic baking dish arrange fish in single layer. Spoon sauce over fillets.
- Roast 12 minutes or until fish is opaque throughout
- Serve with sauce
