orange roughy? Always looking for new ways to make old things! Seems I can't get enough chicken recipes or fish recipes! Being that we are eating more fish now (especially during Lent), I'm desperate for new ways to make fish!

Will you share the way you make your fish?
 
take a pc. of foil spray a little pam on it to prevent sticking. put fish along with frozen veggies (my family likes oriental mix) and whatever spices you like. fold it into an envelope and put in caserole dish (in case it drips). bake in the oven and you have the fish and veggies all in one.
 
I brush it with olive oil, put salt and pepper, lemon pepper and paprika on it and throw it on the grill. Yum!:)

The April issue of Good Housekeeping has a recipe for Asian honey-barbecue tilapia that I'm going to try this weekend. I'm sure you could use any mild white fish though. Here's the recipe:

1 8oz can crushed pineapple in juice, drained
1/3 cup finely chopped onion
1/4 cup honey
3 TBS soy sauce
2 TBS hoisin sauce
2 TBS lime juice
2 TBS white wine
2 tsp grated fresh ginger
1 1/2 tsp cornstarch
2 jalapeno chiles, seeds and membranes discarded, finely chopped
1 garlic clove finely chopped
4 tilapia or snapper fillets (about 6oz each)

- preheat oven to 425F
- In medium bowl combine all ingredients except fish; stir until well mixed
- In 13"x9" glass or ceramic baking dish arrange fish in single layer. Spoon sauce over fillets.
- Roast 12 minutes or until fish is opaque throughout
- Serve with sauce
 

In the oven I bake it with butter, lemon juice and kosher salt or sea salt.

I also sometimes will dip it in egg and a seasoned flour mixture and pop it into the deep fryer (not the healthiest but very tasty ;) ) ~ it cooks very quickly this way...basically as soon as they are bobbing on the top and golden they are ready to take out. :thumbsup2
