How do you change a table assignment onboard?

If there is an open table he can arrange it.
If you are looking to change your seating (early or late) you must do that (or attempt to) right upon boarding.

Often it is impossible to do so, and it's much easier to find a table mate before sailing that you have common interests with.

The embarkation has "Dining Room Changes" - a time for passengers to request changes, often from late to early, etc...might as well give it a try if you are so inclinded.
