***Holiday Recipe Sent/Received***...COMPLETED!!

Almost ready with the 3 that I am in charge of sending out for myself, my sister and my niece. One is completely ready:goodvibes and two are waiting for a few more "goodies" that I need to get this morning. Either sending today or Monday. Will check back in and let you all know.
 
Here's another good, but simple recipe:


Maple Mustard Glazed Pork Roast

2/3 c of maple syrup
3 T dijon style mustard
2 T cidar vinegar
2 T soy sauce
salt and pepper to taste
2 pounds of boneless pork loin roast

Stir together all ingredients (except the roast). Spread or pour evenly over the pork.
Place in a shallow baking pan.
Roast at 350 degrees about 1 1/4 hours.

We make this in the crock pot and let it simmer hours on low. (Great for a gathering as people can take what they want and when.)
By placing in the crock pot for hours, the pork roast will literally fall apart and makes a great shredded pork sandwich.

I love your costumes. Very clever - gotta love a DH that goes along with that.

My DH is a great sport too - Last MVMCP he wore a 13 inch tall Christmas tree hat with Disney ornament on it and it lights up. He is 6'3" on his own so he really stood out.

Hurray for the weirdo DH's in this world!!!!! :cheer2:

Death By Chocolate

Amount Measure Ingredient -- Preparation Method

Brownie
2 ounces unsweetened baking chocolate
1/4 cup butter -- softened
1 cup sugar
2 large eggs -- separated
1/4 cup milk
1 teaspoon vanilla
3/4 cup unsifted flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1 cup macadamia nuts -- chopped
Truffle Mousse
1/3 cup water
1 envelope unflavored gelatin
1 1/4 cups butter
1 tablespoon instant coffee powder
12 ounces semisweet chocolate chips
3/4 cup sugar
5 large egg yolks
1 package Belgian-style cigarette-shaped cookies
with chocolate
1 cup heavy cream

Oven 350 degrees F. Grease and flour 9 1/2" springform pan.
Make brownie: In top of double boiler, over hot, not boiling water, melt chocolate. Cool.
In large bowl of electric mixer, at medium speed, beat butter with sugar until light and fluffy. Beat in cooled chocolate. Beat in egg yolks, one at a time; until blended. Beat in milk and vanilla.
On sheet of waxed paper, combine flour, baking powder and salt. Stir into chocolate mixture until blended. Set aside.
In small bowl of electric mixer, with clean beaters, at high speed, beat egg whites until soft peaks form when beaters are raised.
With rubber spatula, fold beaten egg whites into chocolate mixture until no white streaks remain. Fold in macadamia nuts.
Pour into prepared pan.
Bake 35 minutes or until cake tester inserted in center comes out clean. Cool cake in pan on wire rack.
Make Truffle Mousse: Place water in heavy 2 quart saucepan; sprinkle with gelatin. Let stand 2 minutes until gelatin is softened. Add butter and coffee powder; heat, stirring, until mixture is boiling, butter melts and gelatin is dissolved.
Meanwhile, in food processor, chop chocolate with sugar. With processor running, pour boiling butter mixture into chocolate mixture. Process until chocolate is melted. Add egg yolks and vanilla to chocolate mixture. Process until smooth. Return mixture to saucepan. Cook, stirring, over med-high heat until mixture thickens. Pour chocolate mixture into large bowl. Place bowl in larger bowl of ice and water to chill, stirring often, until thickened.
Place 1/4 cup chocolate mixture in pastry bag fitted with small plain tip. Refrigerate. Pour half of remaining chilled mixture over cooled brownie in pan.
With sharp knife, cut each cookie crosswise in half. Insert cookies, cut side down, around top edge of mousse in pan.
In small bowl of electric mixer, at high speed, beat heavy cream until stiff peaks form when beaters are raised. With rubber spatula, fold whipped cream into remaining chocolate mixture until no white streaks remain.
Spread cream mixture over chocolate mixture in springform pan.
With chocolate mixture in pastry bag, decorate. Refrigerate 4 hours or until firm.

My package was delivered today. My pacakage is from Barb/Luvtoroam. I received 2 Disney candy molds, Minnie's Bake Shop cookie cutters ( I almost bought those last month in WDW!) and recipes for egg casserole, spaghetti and pork chop casserole, swedish meatballs, creamed scalloped corn, two toned fudge brownies, butter cake and cappucino bon bons. Thanks for a great exchange!
 
Glad you liked them. I bought a few candy molds for me too.
I have never tried making them and thought it would be fun (and should be fairly easy -- just my style) ;).
Someone else who used the molds said that putting them in the frig for a few hours after filling them made them come out easy. So that must be the key -- cold in the frig for hours. :cool1:
I just could not figure out why that metal lunch box container only had four cookie cutters inside. :confused3 Quite the packaging for four plastic cookie cutters. :confused:

Pumpkin Chip Drops

Amount Measure Ingredient -- Preparation Method

1 cup butter or margarine -- softened
1 cup sugar
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
2 cups flour
1 cup quick-cooking oats
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup cooked or canned pumpkin
1 cup semisweet chocolate chips

In a mixing bowl, cream the butter and sugars. Beat in egg and vanilla.
Combine flour, oats, baking soda, cinnamon and salt. Add to the creamed mixture alternately with pumpkin. Stir in chocolate chips.
Drop by tablespoonfuls onto greased baking sheets.
Bake at 350 degrees for 9-12 minutes or until golden brown. Cool on wire racks.
