Cranberry Bread

Recipe By :Betty Crocker's Homemade Quick Breads
Serving Size : 2 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 cups cranberries -- fresh or frozen
1 2/3 cups sugar
2/3 cup vegetable oil
1/2 cup milk
2 teaspoons grated orange peel
2 teaspoons vanilla
4 eggs
3 cups flour
1/2 cup walnuts or pecans -- coarsely chopped
4 teaspoons baking powder
1 teaspoon salt

Oven 350 degrees. Grease bottoms only of 2 loaf pans, 8 1/2 x 4 1/2 x 2 1/2 or 9 x 5 x 3".
Mix cranberries, sugar, oil, milk, orange peel, vanilla and eggs in large bowl. Stir in remaining ingredients.
Pour into pans.
Bake 50-60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes.
Loosen sides of loaves from pans. Remove from pans. Cool completely on wire rack before slicing.
Store tightly wrapped in refrigerator up to 1 week.

Here's the reason I drive 45 min to a Wegman's just to find clotted cream:


Simple Scones

2 c flour
1/3 c sugar + 1 t
1 t baking powder
1/4 t baking soda
1/2 t salt
6 T unsalted butter, frozen
1/2 c raisins (or dried currants)
1/2 c sour cream
1 large egg


Preheat oven to 400’

In a medium bowl, mix flour, 1/3 c sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a grater. Use your fingers to work in butter (mixture should resemble coarse meal.), then stir in raisins.

In a small bowl, whisk sour cream and egg until smooth.

Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use our ands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as your press, the dough will come together.)

Place on a lightly floured surface and pat into a7-8” circle about 3/4 “ thick. Sprinkle with remaining 1 t sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (prefereable lined with parchment paper) about 1” apart. Bake until golden about 15-17 mintues. Cool 5 minutes and serve warm or at room temp.

Just posting a recipe to share with everyone-
Macadamia Nut Torte

Crust:
2 c. flour
1/4 c. sugar
3/4 c. (1 1/2 blocks) butter, or margarine, softened

Cake:
6 egg whites
1/2 c. sugar
1 1/2 c. flour
3 tsp. baking powder
1/2 tsp. salt
2/3 c. sugar
1/2 c. oil
2/3 c. milk
4 egg yolks, slightly beaten
2 tsp. vanilla
1 c. macadamia nuts, chopped
Powdered sugar, for topping


Sift together the flour, and sugar. Mix well with the butter/margarine. Pour into a 9x13 inch pan, and press down to form a crust. Bake at 350 degrees, for 15 minutes; set aside. In a large mixing bowl, beat egg whites, gradually adding in 1/2 cup of the sugar until stiff. Set aside in the refrigerator. In a small bowl, sift flour, baking powder, salt, and sugar. Make a well in the center, and add in the oil, milk, egg yolks, and vanilla; mix well. Pour a steady stream into the stiffly-beaten egg whites; folding gently. Fold in the nuts, mixing well. Pour the batter over the baked crust, and bake at 350 degrees, for 30-35 minutes. The cake will be done when a toothpick is inserted into the center, and it comes out clean. Cool, and top the torte with the sifted powdered sugar.
 
mine went out today Priority, but because it has to go far, far away, the lady at the post office said it may not arrive until next week!

While we are openly sharing recipes :rotfl: here is an easy one I like to use:

Cheese Scalloped Potatoes

1 can Campbell's Cheddar Cheese soup
1/2 c milk
4 c thinly sliced potatoes
1 small onion, thinly sliced
1 t butter or margarine
paprika

Stir Cheddar Cheese soup until smooth; gradually add milk.
In a buttered 1.5 qt casserole dish, arrange alternate layers of potato, onion and sauce. Dot top with butter.
Sprinkle with paprika.
Bake covered at 375 degrees for 1 hour.
Uncover. Bake 15 minutes more.
4 - 6 servings

Just a quick update.
I am still shopping for mine. I have my recipes all set. I actually went out shopping last weekend, went to four different stores and since I wasn't feeling well :sick: , didn't really find anything that caught my eye. I couldn't believe that I came home with nothing, definitely not like me :rotfl2: I will finish shopping by Saturday and have it in the mail by Monday. Luckily, it doesn't have far to go.

Upside-Down Apple Gingerbread

Amount Measure Ingredient -- Preparation Method

1/4 cup butter or margarine -- melted
2 large apples -- cored and sliced
1/3 cup packed brown sugar
Gingerbread
1/2 cup butter or margarine -- melted
1/2 cup molasses
1/2 cup sugar
1/3 cup packed brown sugar
1 egg
2 cups flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
3/4 cup hot tea

Pour butter into a 9" square baking pan.
Arrange apples over butter. Sprinkle with brown sugar and set aside.
For gingerbread: Combine butter, molasses, sugars and egg in a mixing bowl. Mix well.
Combine dry ingredients. Add to sugar mixture alternately with hot tea. Mix well. Pour over apples.
Bake at 350 degrees for 45-50 minutes or until cake tests done. Cool for 3-5 minutes. Loosen sides and invert onto serving platter. Serve warm.

I love your costumes. Very clever - gotta love a DH that goes along with that.

My DH is a great sport too - Last MVMCP he wore a 13 inch tall Christmas tree hat with Disney ornament on it and it lights up. He is 6'3" on his own so he really stood out.

Hurray for the weirdo DH's in this world!!!!! :cheer2:
