I will respond a "You're Welcome" from my niece, Cassidy. So glad that you like it. I saw Cassidy yesterday. She's not very happy right now. You see, she loves school, always has...and now her school is on strike. Most kids would be ecstatic with no school, but not Cassidy. Today is the third day.
I'll let her and her mom know to check the board. I just finished IMing her mom.

PS: The pumpkin bar recipe came from a fellow teacher at my school and she had to give everyone in the building the recipe last year after she made us the pumpkin bars.

A really easy one from Allrecipes.com!

Ho Ho Ho Rum Cake
Prep Time: approx. 45 Minutes. Cook Time: approx. 1 Hour .
Makes 1 - 10 inch bundt pan (14 servings).

1 (18.5 ounce) package yellow cake mix
1 (3.5 ounce) package instant vanilla pudding mix
4 eggs, beaten
1/2 cup cold water
1/2 cup light rum
1/2 cup vegetable oil
1 (16 ounce) package chocolate frosting
1/8 cup light rum
1/2 cup chopped pecans


Directions
1.Preheat oven to 325 degrees F (165 o C). Grease and flour one 10 inch tube or Bundt pan.

2.Combine the cake mix, pudding mix, eggs, water, rum and oil. Mix until smooth and pour into prepared pan.

3.Bake for 1 hour or until a cake tester inserted in the center comes out clean. Cool for 25 minutes in pan before removing; remove and allow to cool completely.

4.Prepare the frosting by blending together the frosting and rum. Ice the cake and sprinkle 1/2 cup chopped pecans over the top. Seal in airtight container. At Christmas lay halved maraschino cherries on the top as well.

I really like the Heavenly Desserts Cookbook (in fact, when I saw it, I bought two, one for me and one for you). I hope that you enjoy making some of the items. Have fun baking with your DD this weekend! I am going on a Classic Car Fall Foliage Cruise this weekend to the CT shoreline, so I don't think that I will have time to try any of my recipes They will have to wait until next weekend.

Here's a different recipe -- but one I have not yet tried. DH and I were at the Epcot Food & Wine Fest last weekend and I bought the cookbook. DH RAVED about this dish he tasted:

Strawberry and Mango Salad with Cilantro
serves 6

1 pound fresh strawberries, hulled and quartered
2 medium mangoes, peeled and cut into 1/2" cubes
1/2 cup water
1/2 cup sugar
1/2 cup orange juice
1 T key lime juice
1 T finely chopped cilantro

1) Combine the strawberries and mangoes in a large mixing bowl, cover and set aside.
2) To make the syrup, combine the water, sugar, orange juice and key lime juice in a sauce pan and bring to a boil. Reduce the heat and simmer for 5 - 10 minutes or until slightly reduced. Set aside to cool.
3) To serve, pour the cooled syrup over the fruit and stir in the cilantro.

This was from Chile. And for $2 DH got probably 3 tablespoons of the salad. So best to make your own.

It had 2 great cookbooks! One was a Gilroy community cookbook and the other was a mashed potato cookbook! Thank-you for making the Gilroy cookbook with your favorites!!

I also got lots of extra goodies including muffin baking cups for Christmas, a cute hand towel, a turkey container with mints, vanilla coffee, honeysuckle hand cream, some garlic from Gilroy (I always think of you when the food network does specials from Gilroy!) and lots of gadgets..I know what all of them are except for the scissor type one with the little spikes, that one has me stumped!!

I see I wasn't the only one having a horrible time finding Christmas stuff. Ugh, I was getting so frustrated. Seemed like the only things I could find were Halloween related, with a bit of "Harvest stuff" thrown in. This was the first time I have ever joined you gals with this, so this year I'm planning ahead!!!

I will stock up on Christmas stuff this year and will be all ready to make a slammin box next year!!!!!!
