Help with evenings at the parks

We have always been rope drop people. That is getting old. Next year we'd like to sleep in, go to the pool, and enjoy the parks later in the day, probably arriving late in the afternoon or early evening.

We won't be staying onsite. We will most likely be there the first week of May. How is FP+ selection for evenings at thirty days out? We don't do coasters. We usually get FP+ for Peter Pan, Buzz, Soarin', TSMM, and a few others. Will we have any problem scheduling those attractions? When do the crowds usually thin out?

Because we have always arrived early and beat the crowds, we never felt the need for much of a touring plan. Is there an app we should have for wait times? I have a Windows phone. TIA!

I'm sure you'll be fine 30 days out. I'm an annual Passholder and usually make my FP selections the night before I go to the parks or even the day of. The rides that you should look for first are Peter Pan, Sorin & TSMM. These are high popularity but you will be fine getting a FP for them. I love going to the parks later in the day after relaxing.
 
In May, you should be pretty okay 30 days out for FP+. The crowds don't really thin out at night like you think they do, not until the last hour of park closing. You will notice a drop in crowds that last hour, and should be able to get on a lot of rides at MK. DHS & Epcot you will likely see steady lines on attractions right through park close because their night time shows start at park closing and people will stay to see them. AK will prob. be the same, with 2 showtimes of ROL.
 

If you don't have a problem skipping parades and/or fireworks, those are the best evening times to hit all your favorite attractions at MK without FP. From our experience, many E-ticket rides and rides like Buzz Lightyear's Space Ranger Spin have gone down to waits of less than 15 minutes during show times. If you end up getting the FPs you want, no need to worry about this! We've used the "My Disney Experience" app before to watch wait times, not sure if there are any other ones besides that out there!
 
That is a good, lower crowd week. We were just there. It was pretty easy to add FP later in the evening. Riding during parades is also a guarantee of much shorter lines.
