Healthy Living around the World Showcase ~ June 2016 WISH Challenge!

Challenges - well life is full of them for those of us who live with chronic illness! I would absolutely love to finish my personal goal of completely 13 half-marathons. I got 10 competed before my illness. I truly don't know if my body could cope with that distance though

I hope you will be able to continue your challenge one day!!

Mexican food! Yes please! We make homemade Mexican a lot! A quick easy way to get beans is salsa, cilantro, and black beans mixed up and served with chips! Go easy on the chips, but the beans make it very filling!

It just hit me as I read your post that I have been struggling with this aspect myself. Except I spend most of my time doing things that DH and I can to do together. Usually after work we want to do things together (cook, watch a show, go for a walk, etc.), which is why I think I haven't been sticking to my guns on the cardio. I guess I feel like I'm being rude by putting in my headphones and hiding out in the den doing my own thing for an hour. But as the newlywed desire to spend all our time together is wearing off, I am finding it very important to make me time! Just yesterday I told him, I am going home and getting on the elliptical for an hour and you will have to feed, water, and entertain yourself hahaha! He's super supportive, so I know it's just my hang up-- but I am making strides in facing and overcoming this challenge :-)

Good for you to take the time to take care of yourself! I totally get the idea of wanting to spend as much time together as possible, but I think for a lasting healthy relationship it is also important that both have the space and freedom to do what they need for yourself. And exercising for a healthy lifestyle definitely counts - as long as you don't become as crazy as my friend's DH who decided that he needs to complete a triathlon over the ironman distance (swim 2.4 miles, ride your bike for 112 miles and then run a marathon :scared:) and now spends hours every day running, riding his bike and swimming. At least he promised to take part only once - and my friend now prays that he does not get sick on race day or gets injured or so...

Mexican Food!!! :love: I did not know that beans were specifically called pulses-- learn something new everyday! But yes, I looooove pulses and they certainly play a part in my diet. Pulses were a very large part of our vegan lifestyle years ago, and they certainly stuck around when we started eating meat and dairy again. I'm not a huge meat lover in general so even now I would take veggie burgers, lentils, and bean soups over chicken any day of the week. My favorite pulse dish is chili. I don't have a specific recipe other than having kidney beans and sauteed tomatoes and onions as a base then I build from whatever I have on hand or what was on sale. I used to add bulgur wheat or have rice depending on the dish to make it a "complete protein" but I have since quit being particular about that stuff since I eat meat now and know I am getting complete proteins from that.

I had no idea that you used to be a vegan! Your chili sounds delicious!! And very similar to a recipe that I have from a vegetarian cookbook.

Catching up on yesterday's question about challenges... For physical zip lining is on my list and I'd love to hike more, well start hiking actually since all I do is walk. On a more mental level I'd like to try Orientering. I would consider my recent trip to Texas a mental/ emotional spirit building challenge and plan on doing more of the same type of exploring.

I like your idea of doing more exploring as a challenge! Far too often weekends for me are just hanging out at my place and maybe going into town for coffee. I really should explore more, but I find it difficult when I am on my own to get going.

I'm back on track today, logging my food in WW and MFP and have faced the scale square on. It accurately reflects the way I've been eating, so it is what it is. I know what to do, now it's just left to the doing.

So, tell us, what fun challenges could you imagine to be interested in?

On our trips, we've done a few things that were really outside my comfort zone (which isn't very large) - I've tried ziplining and I've also swam with the stingrays as examples of 2 that come to mind.

This year, our oldest DD is wanting to zipline, so I might do that again even though it wasn't the best experience the first time I did it. Maybe this time I'll like it more!

Do pulses play a part in your diet? Do you have a favourite dish that includes pulses? And as a fun bonus: Have you ever eaten at one of the Mexico restaurants at Epcot?

Truthfully, I'm not a big fan of Mexican food. I enjoy eating at the Mexican restaurant in town mainly because the people that run it are great people and they make it fun to eat there! It's not a place I would ever choose to eat while out of town though.

So, that being said, pulses do not play a big part in my diet which is too bad because I know that can be a great addition to a healthy diet, I just haven't really found a way to enjoy them much. Maybe that will change some day though.
 
:scared1: I am always scared when I read about your life because if I had to acchieve half of what you get done I would be totally tired. But this sounds crazy even for your usual craziness! Good luck - and drive safely!

Thanks for the safe travel prayers..... but my MOM... my savior and ANGEL stepped in and went shoe shopping this morning and bought FOUR different pairs for my DD to choose from!!! I cannot tell you how much that helped today's stress level!!

Let's stay in Mexico for another day and let's talk about Mexican food. The Mexican pavillion has three restaurants and a bar (the second bar, the Margarita stand is currently not available, there are rumours that it will reappear bigger and better in a different location, but the old one interfered with a certain summer house where two girls will be moving in soon). The San Angel Inn is inside the pyramide and is a waterfront table service restaurant where the boats for the Gran Fiesta Tour pass by. La Hacienda de San Angel is another table service restaurant, located directly at the shore of the World Showcase Lagoon. It has large windows for viewing the nighttime show on the lagoon: Illuminations: Reflections of Earth. And next to it is the Cantina de San Angel, which is a counterservice restaurant offering outdoor waterfront dining. One trick: During lunch hours La Hacienda is closed, but the dining room is available for air conditioned indoor seating for the Cantina guests. This is the inside of La Hacienda:

So, with so many restaurants, food seems to be important in Mexico! I want to talk about one aspect of Mexican food today that seems to be a true staple in the Mexican cuisine: beans. Beans are a legume, or more precisely, a pulse. Legume is the whole plant, the single bean we eat is a pulse (at least that is what wikipedia tells me). Not only beans belong into the category of pulses, there are also peas, chickpeas and lentils.

2016 is actually the International Year of Pulses! And pulses are great for you, they have many benefits:

  • Pulses are part of a healthy, balanced diet and have been shown to have an important role in preventing illnesses such as cancer, diabetes and heart disease.
  • Pulses are a low fat source of protein, with a high fibre content and low glycemic index.
  • Pulses are very high in fibre, containing both soluble and insoluble fibres. Soluble fibre helps to decrease blood cholesterol levels and control blood sugar levels, and insoluble fibre helps with digestion and regularity.
  • Pulses provide important amounts of vitamins and mineral. Some of the key minerals in pulses include: iron, potassium, magnesium and zinc. Pulses are also particularly abundant in B vitamins; including folate, thiamin and niacin.
  • Pulses typically contain about twice the amount of protein found in whole grain cereals like wheat, oats, barley and rice, and in most developing countries constitute the main source of protein for most populations.

I have TWO wonderful lentil soup recipes, a few chili recipes that include beans and/or chickpeas, and a few new recipes I have yet to try.

I know that you could not go for the brand that you wanted originally because of your hourglass figure (which seems to change currently for the better, that was a great woohoo!!), but I remember you being really happy with the one you got?

I recently started to cook more vegetarian recipes and they depend a lot on pulses. I really love all of them, always have. I think my overall favorite are lentils and I am going to share a recipe for a dish that is not Mexican, but Indian. Since there is no India on the world showcase (it kind of can be found at Animal Kingdom those), I think it can't hurt to include it here.

Tarka Dal (Recipe from Foolproof Indian Cookery by Madhur Jaffrey)

75 g (3 oz) yellow split peas (skinned mung dal)
75 g (3 oz) split red lentils (masoor dal)
I often use just red lentils and just realised that I never have had split ones...
1/2 teaspoon ground turmeric
900 ml (1.5 pints) water
1 teaspoon salt
3 tablespoon olive or groundnut oil (this is where I change the recipe, it works well with just 2 teaspoons of oil, I have even done it with only one teaspoon)
1/2 teaspoon cumin seeds (I love cumin, so I use more)
2 hot dried red chillies
1 garlic clove, lightly crushed but left whole, then peeled

Wash the peas and lentils in water, drain. Put peas and lentils, water and tumeric in a pot, bring to the boil. Be careful, it can easily boil over and the water is very yellow thanks to the turmeric. Turn heat down when it starts boiling, partly cover the pot and let simmer gently for 40-45 minutes until the peas and lentils are very soft. The add the salt, turn off the heat and cover the pot.

Put the oil in a small frying pan (I use a non-stick pan) and set over a medium-high heat. When the oil is hot, add the cumin seeds, the chillies and the garlic. When the garlic has browned lightly (also watch the state of the cumin seeds you don't want them to burn, just be nicely toasted), quickly add the oil with the spices to the pot with the dal, immediately put the lid back on and let it trap the aromas for a few minutes.

The chilies do add a lot of spice, so if you don't like your food hot, use only one. I also find that they burn easily and that is not good either, so sometimes I take them out earlier.

I eat the soup with plain yoghurt.

I love beans, peas, chickpeas, and lentils! I almost always have chickpeas in my salad, and if we have some sort of beans in the house, I like to throw those in too. I eat them because I like the taste ... but it's good to know that they have a lot of great health benefits!

Will post today's question of the day after my lunch break!! Until then, my answer: I am thinking that I would like to try ziplining or a rope course. I have a fear of heights, but I have started to learn to deal with it when I feel secure. I think it would be an interesting challenge, especially a rope course would also provide some physical challenge, not only a mental one. We were talking with some friends about going to one here in the area this summer and I hope that we can get it arranged. It should be a lot of fun!

I did a ropes course last year and really enjoyed it. I was tired by the end (it's more hard work than you'd think) but I'd definitely do it again. I will confess that I climbed up to the start of the first rope crossing and thought "you know what, maybe I am scared of heights!" but a friend coaxed me across and having done the first I knew I could do the rest.

I went to the gym before work this morning but then I had a glass of wine with colleagues at lunchtime and went out for dinner with my husband after work (Japanese). A little naughty but it is the weekend.

QOTD: We eat a lot of peas, there's always a bag in the freezer and they go with so much. I also love soybeans (which make a lovely mash with basil). We have other pulses more occasionally, normally when we're cooking Indian or making a bean, sweetcorn and tomato salad as a side.

We've eaten at San Angel Inn once but didn't have a great experience (poor service) so we haven't rushed back given that there are so many other yummy places to go. We also grabbed a tamale from the counter service last Christmas but haven't eaten there other than that.

QOTD: Love, love love Mexican food! I guess my favorite truly is Tex-Mex with its fajitas, nachos and chimichangas. I think pulses are delicious, but only my daughter agrees with me. None of the boys (including my husband) are fans, so there are no beans in my chili and nothing other than green beans and peas can be found on our dinner plates at home. But, when I'm out, especially at Mexican restaurants, I always enjoy my beans. I also always put chickpeas on my salad at a salad bar.

We've only eaten at the quick service restaurant at Mexico at Epcot, but it was really tasty. I've always wanted to try the table service restaurant, but we are creatures of habit and no one ever wants to give up our Via Napoli dinner. We don't ever do two table service meals a day, so we experiment with lunch at various quick service places around the park and enjoy our Via Napoli pizza for dinner. Two trips ago, we reversed it and ate a later lunch at Via Napoli and ate a late dinner at the quick service in Mexico. We got a table right up against the lagoon and watched the fireworks from there. It was a great view and a great way to see the show.
 
Question of the Day for June 9 (sorry for the delay!)

The main feature of the Mexican pavilion at Epcot is its large pyramide:

And I always think, how fun it would be to climb up there and enjoy the view! Actually someone did a while ago, there is a news story about it here. Of course, this would not be a smart thing to do, I am not sure you would not be thrown out of Disney parks for a long time if you did this. But still, I think it would be a great challenge! So, tell us, what fun challenges could you imagine to be interested in?

I think I'm pretty good on challenges for awhile. This running challenge has me... challenged. I need to find a way to increase my speed and just practicing and training will get me there for sure.

Semi-related to this post, THANK YOU for posting the differences in the restaurants at Mexico. Hubs and I are going to try Mexico's dining at our December trip and I couldn't remember which one was which. I am excited to try the one inside the pyramid. :D

I've never heard of pulses before - so this has been very very very educational. I didn't realize that beans were one.
 
Good morning! I'm between calls here "at work", so I wanted to say HAPPY FRIDAY! Things went from crazy to insane during the night when DD realized that the shoes for the wedding tomorrow are HERE and I probably won't be there in time for the pictures (due to DS's graduation in the morning), so I'm going to try to beg off work a few hours early and drive the shoes to my parents' house in Massachusetts, drive home, and then be sure DS's graduation cap gets decorated, clothes for tomorrow and Sunday get ironed, packed, etc, and HOPEFULLY get the party invitations printed and into the mail!! Not enough hours in the day!

Yeah for Mum's - both you and your own Mum. I hope you enjoy your son's graduation and don't forget to take the tissues! If you are anything like me there will me Mum tears I'm sure :-). So glad you can have your pick of dresses to wear.

Mexican - love Mexican food. Yes beans are a part of my diet - I also eat baked beans for breakfast some days. I put either red kidney beans or black beans in my pulled chicken for soft tacos or in the minced beef for hard shell tacos. My kids aren't fans and spend their time trying to pick them out - although they are getting better with nagging from Mum to 'just eat it!". I also quite like chickpeas and like them in a salad also.

As you know I haven't made it to WDW - but we have had Mexican and DCA - yum.

I only have a few seconds, but since I don't think I'll be able to get back on before Monday, I figured I'd share my progress report: 33%! Right on track for where I need to be - I've been able to make some time for myself every day so far this month, which is pretty awesome!
 
Checking in - I am at 24% of my goal to track with MFP everyday - slight cheat as I didn't decide my goal till the 5th of the month I have made my goal total 25 days which is the remainder of the month.

Today was my first day that I have not gone over calorie limit - so little yeah for that!

I am using an Australian CSIRO (Commonwealth Scientific and Industrial Research Organisation) diet plan and cookbooks to help with meal planning at the moment.
I made a really yummy chicken stir fry tonight - all fresh ingredients - sauce made from scratch - here is the best bit both my boys really liked it too!!! DD is off at a sleep over so I don't have her opinion. I find it tricky when cooking for the whole family - I weighed the chicken in my new scale - but here's the tricky part I thought I adjusted the recipe for the 3 of us but there was some left over ..... So it just feels a little less precise for tracking.
 
We picked up a couple of pre made "salads" for lunch today to have with some chicken. One contained edamame (soybeans) and the other black beans - quite appropriate given the recent discussion about pulses!

I'm 35% of my way towards my target but the last week of the month is going to be tricky so I need to get ahead of myself!

I do not eat beans. I can't get over the texture of them. Mexican food is not my favorite type of food. I try to avoid it. Too many been and too spicy. We had a reservation at San Angel in this trip but I talked my husband out of it. Thanks to the dis and there review. My son and husband did eat at the quick service. My daughter and I ate hot dogs from one of the stands.
 
Well my trip is over. We are headed home. We won't get home until either really late tonight or tomorrow depending on if we stop at a hotel over night. We are just about out of Florida. 5 more states to go.

I am ready to be home or I should say my body is. I haven't been feeling the greatest since yesterday. I don't think know it is a virus or anything. I am thinking my body is revolting and wanting a normal schedule again.

I did see a little bit more of the world show case but the rain did not give us much time. We were Monday and only stayed at epcot until the tropical storm hit and then stayed at the resort the rest of the night. We went back tuesday for dinner at teppen edo but it was a late dinner and we wanted a good spot for illuminations so we didn't explore. We were there last night. We ate at chefs de France so we looked around there a bit. It started to storm again so after dinner we walked through UK and Canada. I was feeling pretty sick and we didn't want to get caught in a down pour so we headed back to the resort. We still need to explore the countries between us and uk. Next trip we will see those.
