A few questions as I figure out how I want to do this:

If I have a 10 day ticket, I can make 10 days worth of FP, but do they have to be within 10 days, or can they be within the 14 days I'd be able to use them? Or, can I make them beyond the 14 days (I also have a 2 day from a previous free dining, but I can't get it to connect in MDE so I'll probably just have to use it day of, but would love to have FP for the days I use them).


If I decide to get an AP, how many days can I schedule in a row, and how many days must be between before I can schedule another set?

With an AP and an onsite stay, you can select FPs for your complete length of your onsite stay.
 
If you don't have a hotel reservation you can book 30 days out per day. Tickets expire 14 days from first use, so you have 14 days to use that 10 day ticket. You can add that 2 day ticket to your MDE as well and just make it a secondary ticket. If you upgrade to APs and are not staying onsite you can make any 7 days of FP+ at the 30 day mark.
 

With AP offsite, you can have up to 7 days of FP+ scheduled within the next 30 days. They don't have to be 7 days in a row.
 
You should call and get your 2-day ticket linked to MDE. Also add on a 10-day ticket so you can book a total of 12 days.

You can upgrade to an AP to begin using the benefits such as free parking, etc. but I'm not sure if the system allows you to keep all 12 days of pre-booked FPs if you do an upgrade to AP.

+1, and, basically same answer for your other question:

if you have a 10 day ticket, and staying offsite, you can book 10 days of FP+ choices within the next 30 days. Doesn't have to be 10 days in a row. But it's within the next 30 days. So, if you are leaving in 30 days, you can book that day today. Then tomorrow you can book FP for your 2nd day of vacation, etc.
