How easy/hard will it be to get a GV the last 2 weeks of August? It doesn't matter which week, we just want to book after the 16th. We would be booking at the 7 month window.

We've only stayed at a GV in May, both times around Memorial Day; we had the luxury of the 11-month window, which helped, I'm sure. I would think it may not be that difficult to do in August based on the fact that many schools in the country return to school early and WDW seems to be relatively uncrowded in mid to late August. This is speculation on my part, but I would certainly make the attempt. The GVs are exceptionally nice!

The end of August and all of September are times I think it will be very possible to book an OKW GV at the 7 month window. I'd likely do it day by day too.
