We wanted to go to the Food & Wine pairings again this year (the $35/person events with 4 tastings and matching wines). It's food roulette as there are no choices and you don't know ahead of time what they will serve. We went last year and totally lucked out (didn't realize ahead of time that we were playing food roulette), but realize this is far from a given.
The dining reservations people say there is no way to make a special dietary request. I even spoke with a manager and got the same answer. Very frustrating! This should have occurred to me far sooner, but I eventually realized I should do what I do for any special dietary request -- make the PS (or reservation in the case of Food & Wine or a dinner show) and then just call the restaurant directly, given them my PS/reservation info, and explain my needs.
The chefs were lovely and we are all set! It totally is not an issue, even for events like a pairing where they make special dishes to go with specific wines and don't get a lot of advance notice re what the wines will be.
I reached the restaurants by calling the main switchboard at 407/824-2222.
