Fantasy Dining Rotation

Crusing on 7 day Eastern on Fantasy this November-second cruise. Second seating for dinner. My hubby and I want to do Remy. If we score a reservation at 6:00 which I think is the earliest, would it be possible to meet our three boys (15, 11 and 9) in whatever dining room they happen to be for dessert? I know people request specific dining rotations to suit these kinds of things but I don't think I want the hassle. I would rather feel as though we weren't missing anything special and just join the boys when we can--preferably a little later into the cruise so the staff knows them and is comfortable with them dining without us. Bad idea? Any suggestions/advice welcome!
 
Our experience has been that dinner at Remy is 2.5 - 3 hours, so if your boys are in a MDR for late seating you should easily be able to join them.
