E. Your menu from yesterday looked really good. I think maybe you didn't eat enough food this week and your metabolism may have stalled.:confused: Keep an eye on what you eat. Maybe one day have a little extra, the next cut back. Maybe you can fool the metabolism into burning high all the time. Above all, don't give up! This may take a lttle longer than you originally hoped, but your still gonna look great when you reach goal, no matter when that is!::yes:: So keep thinkin about how good your gonna look and stick with it!:tongue:

E. I'm just getting to your journal as well. Hang in there! I've been doing this since the New Year, and there are several weeks where I've lost 1/2 pound despite exercising 5 times a week and staying well under plan. It's definitly discouraging, but just hang in there! In fact, it happened to me this week. So far I haven't actually put any weight on from week to week, but I also had to put the scale away, cause day to day is a different story!

Concentrate on how you feel and how your clothes fit. Hang in there, keep on plan and the weight will be gone.

Edited to change my 5 times a week exercise program back into reality!!

Your responses really helped me get through the day today! It was a crazy, busy day but I came back to my journal several times to read the encouragement, it kept me out of the freezer where those darn chocolates are! I am feeling much "chipper" than I did this morning. I should know better, I can't do mornings without my coffee!::yes::

I DID eat more today and I feel better for it. I ate alot of veggies today with hummus, I love the stuff. I never bought it doing weight watchers because I couldn't stop with just a few tablespoons. Hoping I won't overdo it on SBD.:hyper:

B-late for my daughter's dentist appt. so I didn't have any:eek:
S-string cheese, stopped at Barnes and Noble with my daughter and I had an emergency Starbuck's tall coffee with 1/2 1/2...yikes!
L-cottage cheese, hummus, assorted veggies, V-8

D-veggies, grilled pork, lemon ricotta cream with almonds (if I close my eyes, it taste like cheesecake)

I won't weigh myself again until Monday when I start phase 2. I have also joined the April Fools challenge which sounds like fun. I put myself down for seven lbs. Seems doable!:teeth:

Again, thank you for stopping by and reading my journey so far. I can't believe I've gone almost two weeks without "cheating" on this diet! I don't know if it is the diet or the every day accountability of this journal but something is working and I am just going to keep at it. I like how I feel, I like what I see so that in itself is motivation enough but it is such a wonderful feeling to find encouragement and understanding with so many people. Who would of "thunk" that my planning our Disney vacation would lead to this....

Too funny about only remembering the Barley. My first trip was when I was a teenager and one of the things that sticks in my mind most was not knowing what okra was in my soup. It must be a regional thing...lol

The weight will come off and you will look great. Keep up and you WILL see results! :Pinkbounc Did you and the kids ever get those tortillas made? I'm just curious what you thought. I had one in my lunch the other day and all the ladies split it and then decided we should have a pitch-in next Friday--I'm bring the tortillas. Looks like I'll be busy making those! and that is so great that you've gone so long without "cheating". this "diet" is really working for you! it's so great to find a plan that you really enjoy, makes it so much easier to stick to! and how wonderful that disney has led you here. lots of people are using disney trips as goal points, i think that makes it more fun too :teeth:

ooh, i love hummus too! since i am on ww, i do stop myself at 2 tbsp usually. i make sure to measure it out beforehand :p . it does end up being the perfect amount to dip my portion of baby carrots in though :)

and like denise said, i'm an expert scale kicker. any scales left out on the porch have no chance against me :p , but let's hope you won't need my assistance :)
 
It's been quite a day. It is one of those blasted winter days here in the good ol' state of Maine. Grey, cold, wet, icy and just plain yucky. This is the kind of day my children expect me to make some warm and fuzzy comfort food like I normally would. Homemade bread, cookies, brownies, apple crisp...you name it. This kind of weather just brings it out in me! What did I do instead? I cleaned like a madwoman...it kept me out of the kitchen though. I DID make chocolate chip pancakes for my son and his friend that stayed over. It's considered a special treat and he really wanted his friend to try them. Wow, can 7 year old boys EAT!::yes::

I meant to put the scale away yesterday but I got up this morning and there it was so naturally I stepped on it. Lost another lb which brings me to 154. What's the phrase-"onward and downward." :teeth: That means only 14 more till my before vacation goal and 6 more till the April Fools goal!

I kept that in mind as my family ate all my chocolates I had been saving in my freezer! It was very comical...I would ask each one what they had gotten and could I smell it. Oh MY! Chocolate smells soooo good!:hyper: I then very quickly went to the ALLEARS site and looked at all the yummy things I am going to allow myself on vacation. For a surprise I am taking my family to Beaches and Cream for the Kitchen Sink...can't wait to see their eyes! YIPPEE!:earseek:

I ate quite well today! I made lemon ricotta cream last night and couldn't finish it so I saved it for this morning. It was yummy with my morning coffee. Felt as though I was cheating...

B-bacon and eggs, V-8
S-ricotta cream with coffee and ff 1/2 1/2
L-left over pork and veggies
S-mixed nuts (probably more than I should of had)
D-Sauteed chicken with garlic and parm. cheese, roasted veggies.

Water-3 liters
Exercise- Pilates basic 20 min (still fighting this nasty cold)

I might make a mocha ricotta cream later because darn it that chocolate smelled GOOD!

The children loved the tortillas. They smelled heavenly too! I let them sprinkle cheese or cinn. and sugar on them. They made little tiny ones which were really cute!

Marcia-
I just may need your scale kicking expertise. I rue the day I bought the thing!:rolleyes:

You are doing so well on this plan; I'm so glad you've found something that works for you--keep it up! Awesome job avoiding all those temptations today--I'm not sure I could have done the same. I've got a recipe book that has recipes in it for some low carb bread if you are looking to use your bread machine. I would be happy to send you some of them. I am going to have to ask for a bread machine for my birthday in September I think. I am like you with baking comfort foods. I love to bake and to make dishes that my Mom made when I was a kid. I am trying to find alternatives for all of that. If you are craving a tuna noodle casserole let me know because I have a recipe for that as well!

You are off to a great start! Only 14 more pounds to go!

Hi Amanda,

The ricotta creams ARE yummy but very rich. Here is the basic recipe...

1/2 cup lowfat ricotta
1 packet of Splenda
1/4 tsp. of extract of choice or lemon juice or 1/2 tsp. cocoa

I usually sprinkle chopped almonds on mine for some crunch. Be creative...espresso powder with the cocoa, lime zest, lemon zest.

Have fun...

Spent all day on Taxes. Was really hoping to get back what we did last year to go towards our trip but we are getting over 1500. less. That was a shocker, now I need to rebudget a little.:earseek:

Didn't have time to eat much today except a can of mixed nuts. I have also had very little water but I will try to make up for it now that I'm done with paper work. I am soooo glad the chocolates are gone right now!

Well, at least that awful tax chore is done. I had thought I would get to mine today, but didn't. I'll have to work on them next weekend......

that ricotta cream sounds really good. it's so nice to feel like you're cheating when you're actually staying well within your plan! good for you :bounce:
 
Today was a great day.::yes:: I officially ended phase 1. My loss in phase 1 was only a grand total of 6 lbs. BUT my clothes fit so much better and it is amazing how many people have noticed the little things (hair, skin, energy) My husband has even asked to read the book. WOW! I am not going to dwell over the fact I had my heart set on weighing several lbs less than I do today. I am going to concentrate on the fact that I have lost all cravings for sweets and breads. That is a major, major step for me! I was going to stay on phase 1 a little longer but my husband bought fruit cups this morning and wow, they looked good. So, for the first time in two weeks, I had cantalope and grapes. YUM!!! I also had a light and fit carb control strawberry yogurt tonight instead of ricotta cream. They are pretty yummy, too!

Here is what I had today:

B-coffee w/ ff 1/2 1/2, cantalope 1/4 slice and 4 grapes! :)
S-string cheese
L-chicken, veggies, V-8
S-string cheese
D-Steak, spinach, cauliflower, light n' fit carb control strawberries and cream yogurt.

I spent most of today doing housework and laundry. While folding clothes I decided to try on some skirts that had been hanging in my closet unworn for years. I couldn't believe it when I put them on and they hung on my hips. YIPPEE!!

I weaned my youngest from nursing in January so I lost a few lbs then. I am one of the few that do not lose while nursing but when I am done, about 5 lbs goes instantly away. ( all in my breasts;) ) around that time I also started WW again with about another 5 lbs lost from that. Add it all up and I am well on my way to a smaller me. YIPPEE again!

That is it for now! Just going to keep doing what I'm doing and hopefully this whoosh thing will happen! I'm going to take a page from Lisa's book though and drink much more water!:teeth:
My husband also said if I get up with him in the morning he will do Pilates with me. I have such fun doing them with him so hopefully we can keep each other motivated. 5:00a.m. is really early though especially before my coffee!

Elizabeth! Great Job! You have no reason to be disappointed with 6lbs.--that is great. You are well on your way. It is so great that DH is willing to get up and do pilates with you; his encouragement will go a long way. I bet you skirts look great! and you've got to love the compliments! :) I get kind of embarassed when other people notice I've lost weight, but it really does make me feel good. ;) Congrats also on making it to phase 2; that has to be a great feeling. Have fun and stay with it; you are doing so well. I'm sorry to hear about your taxes; I hope rebudgeting goes well. Oh, and I'm glad you liked that yogurt; I tried the peach and cream at my sister's recommendation and I thought is was gross. I'm always looking for ways to cut sugar out of my diet, but that's not going to be one of the ways! Have a great night! :)

I bet you look incredible in those skirts. Congratulations. Isn't it a great feeling to be free from those cravings. You are doing so well. Keep it up.

The parmesan chicken is really easy. I'll get back to you on the choc. sauce.

I don't measure anything, sorry. Everything is approximations.

1/8 c each shreddedparmesan, romano, and mozzarella cheeses.
1/2 t parsley
dash basil
dash garlic powder
black pepper to taste.

Mix these ingredients. Rinse 6 boneless skinless chicken breasts. Cut a shallow pocket in each breast. It works best if you make a slit then make it bigger inside using your finger. Stuff each breast with as much cheese as it will hold.

Before I went lowcarb, I would bread the chicken before frying, but I leave it plain now. You could use parmesan cheese to coat. Brown the chicken in small amount of oil, but don't cook through. Place chicken in Corning ware dish. Cover with marina sauce and mozzarella cheese. Cover and bake at 300 degrees until done. It usually takes about 15 minutes, but you can contine it in the oven for 30. Because it is covered and in the sauce, it is really juicy.

elizabeth, congrats on making it to phase 2! :bounce: and 6 pounds is nothing to balk at! that is so great! add to that the fact that your clothes fit better, and you just feel better, those are major accomplishments :teeth: .

pilates with your husband sounds wonderful. not only to get exercise, but to spend time together. that's always nice :). 5am though, yikes, definitely drink that coffee :p

Wow, it has been awhile! Things are so crazy here with the Auction and Gala committee I am on. I have an unbelievable amount to do today but I wanted to check in with my journal and post what my progress has been.::yes::

I was getting pretty discouraged with my scale NOT moving for almost three weeks so I did a little research and found something called a Fat Fast. (the modified version) I've tried it for two days and finally broke through my stall. I don't recommend it for everybody but it gave me the encouragement to continue and not give up which is exactly what I needed. I also made sure I took my daily supplements!

Oh Yes!! I found this website fitday.com where you can plug in exactly what you are eating and it will graph it all for you and give % so you can see just where your nutrients are coming from and % of fat to carbs and protien. I love it!::yes:: It helped me see where I was eating too much red and green peppers and that could have caused me to stall. I didn't realize they were so high in carbs.:eek: I also realized I wasn't getting enough (good fats) in my eating which again could cause the scale not to budge.

I am now at 152 which is two down from Tuesday...I am back to phase 1 eating today and hopefully I won't yo yo back up.:yo-yo:

I've not had time to post on anyones journal but I have been trying to read them as time allows! :)

Try the vanilla low-carb...very good with no aftertaste I've noticed with the other flavors. I like it with a few slivered almonds on top for crunch.

hey elizabeth, great job breaking through that plateau, definitely a great reason to celebrate :bounce:

and isn't fitday wonderful? before i was doing ww online, i would use it to track my calories/food ratios, it was great! now with ww, it keeps track of everything for me, so i've gotten away from fitday. although, i do use it every now and again if i need to find the nutritional info for some stuff. glad it's helping you out!

Elizabeth, you're really sticking with your eating plan - good for you! I don't know how you do it with everything else going on but good for you!!

I've never tried the fat fast, but I've heard of others having good results using it. You are a brave woman!! ::yes:: Glad it worked!

Now, about that Kitchen Sink.....we've spent lots of time at Beaches & Cream and if you have any questions about it, let me know. We've had them in the past - delish! The secret for us is to ask for enough extra bowls so that each person can scoop out what they like. That way, you don't get as much of a melted mess at the end. :p
