What’s for Dinner Tonight?

Tonight I'm making roasted turkey breast with Knorr chicken noodles and roasted asparagus.

Grand kids here again....pick up and dinner and then back to their house when DS gets home after picking the dog up at day care.
DGS will finally be happy. Grilled steak, tater tots, biscuits and mixed vegetables (DH and I will have cole slaw

Tonight would normally be a celebration dinner out, but it will have to pushed out until the weekend....

tonight will be panko crusted chicken strips. air fried, then made into chicken strip wraps. Maybe I'll grab some tater tots to go wioth them

I'll need to stop on the way home to grab a small cake (and a few other things). Today is our "Happy Gotcha Day". 8/13/2003 was the day my wife and I met our son for the first time. He was born in South Korea and came home on this day, 22 years ago. Several months later the adoption became final, and we became a family. He's fresh out of the military and started a new job this week, so the celebration dinner will be this weekend.

His birthday is actually in March. Today is the day he came home for the first time. He was about 4.5 months old when he came home and when we adopted him. Today has always been a special day for us, and we always celebrate it.

Last night I went out with a friend for dinner. I had some kind of lobster sushi and a couple of cucumber basil margs. It was all delicious!!

We're back to eating out for a few nights. Last night we arrived at the hotel late & didn't have many options, so we chose a restaurant that was within easy walking distance.

We shared a couple small plates: Charred octopus tentacles served with crispy Yukon potatoes, microgreens, Salmoriglio sauce and Calabrian pepper olive oil. & Asian style fried calamari with spicy chili pepper sauce, black sesame seeds and scallions. (restaurant descriptions)

These dishes were an epic failure. It was like trying to wash down a bowl of sugar with a glass of sour brine. The only good thing in either dish was the potatoes. DH really enjoyed those.

On the walk back we stopped by the only restaurant still open & picked up a shepherd's pie to bring back to the room. This wasn't great, but it was edible, which was a big plus at that point.

We've decided to stick with the restaurants we know & enjoy for the next few nights.

To all the members of the @TAX GUY family:

No ice for a tomato ice bath so still will be working on the ratatouille tomorrow.
Switched over to the the corn instead and processed it down to cobs for stock and kernels now flash frozen and portioned into freezer bags. Freezer is getting full yet conversely I can see in the fridge again, lol.

Eating yesterday’s leftovers tonight. Decided to bulk it up with sautéed mushrooms, green beans and pad Thai rice noodles.
Everything prepped just need to heat up when I’m ready to eat.

I’m cleaning & organizing cabinets today! That’s always fun. NOT! But I certainly feel productive afterwards.

Tonight I’m going to season up some lovely boneless pork chops for the Traeger. Sides will be garlic sautéed green beans & parmesan couscous.

Still hotter than heck here so Hoffmann's hot dogs on the grill, macaroni salad and baked beans tonight....college boy asked for brownies so brownies and ice cream for a dessert option!

It was a coworkers last day and we went out to lunch. I had the lunch box lunch special which was miso soup, salad, California roll, stir fry mixed vegetables, scallops, and spicy shrimp. It was a lot of food. I did not have dinner. DH had leftover pulled pork as a sandwich with leftover pasta salad.

I've tasked the boys with cooking. so it'll either be frozen pizza, mac and cheese, or chicken kabobs. I'm assuming it'll be one the first two.

Went to the Flatbread Co in North Conway for dinner tonight. Delicious!

It's too hot to even think about cooking and currently raining like crazy with thunder and lightning So grilled cheese and fries it is. As long as we aren't eating out or getting take-out I'll put it in the "win" column.
