Ever made carrot pie?

I found a recipe for carrot cinnamon pie in the paper a couple weeks ago. I think I'm going to make it for Thanksgiving. It is basically the same as pumpkin pie, but it calls for 2 cups of cooked, mashed carrots instead of pumpkin, and the spices it calls for are cinnamon and ginger. What do you think it will taste like? It might be gross, but I'll let you know! :)
 
Wow, how interesting! Please do let us know how it turns out. I'm not brave enough to be the guinea pig. :laughing:
 
Oooh... better your family than mine!!! I don't think they would ever eat anything like that, but DH isn't very adventerous!!!

Here's the recipe in case anyone wants to try it!

Cinnamon-Carrot Pie
2 cups cooked, mashed carrots
1 (12 oz) can evaporated whole milk
1 cup sugar
2 eggs, beaten
1/2 teaspoon salt
1/4 teaspoon ginger
2 teaspoons cinnamon
1 (10-inch) unbaked piecrust
Preheat oven to 400F.
Combine carrots, milk, sugar, eggs, salt, ginger and cinnamon; beat for 2 minutes. Pour into unbaked piecrust.
Bake 15 minutes; lower heat to 350F and bake 45 minutes longer or until filling is set. Serves 8.
 
Thanks. When I make it, I'll probably used baby food carrots. I use them when I make carrot cake - I imagine they'd work in the pie too. I'm guessing the this will taste very much like sweet potato or pumpkin pie.
 
Well, I made the pie. It wasn't horrible, but I probably wont make it again. It did taste like pumpkin pie, sort of. I don't think I mashed up the carrots smoothly enough; there were lumps. Shadeaux, your idea of using baby food is a good one. My niece actually liked it a lot, and took a big hunk home with her! And she wants the recipe!
Did anyone else make it?
