I went over to All Ears and looked at their updates from last year ...
All the Le Cellier pairings were gone on the first day as was the Scotch pairing at Rose and Crown and the Sweet Sundays with Colette Peters. There was also a pairing that was supposed to be held in the Seas Salon over at Coral Reef that sold out on the first day and then later those sneaky wanks moved it back to the regular dining room in the restuarant.
Within the week, the following events were also sold out: Two vertical wine tastings, a sensory wine lunch featuring Caymus and Conundrum Vinyards, the signatue dinners at Bistro Paris and California Grill, The Brewers Dinner, five of the six exquisitely expensive evenings that were being offered, the kitchen conversation with Cat Cora, two afternoon tea sessions with Stephen Twinings, all of the F&W pairings in Italy and France save one each, a fair number of the additional pairings that were supposedly being held in the Seas Salon, and half of the available pairings in Morocco.
I agree with TDC Nala ... book what you most want first or the event that is likely to sell out quickest and then work down the list from there.
